Fall Pancakes

Made pancakes for Mary today, here is what I threw together-



Makes 8 4" pancakes
Serves 2

5 tbs almond meal
1 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
2 eggs
1 tsp vanilla
3 drops zero sweet
3 tiny spoons Trader Joes Stevia (or equiv)
1 tbs cream (opt)
oil for cooking

Mix dry ingredients in a bowl. Set aside and mix wet ingredients (except cream) in another bowl. Add wet to dry and mix. I use a whisk. If it's too thick, add the cream. Like any pancakes, they are ready to flip when edges are dry and there are tiny holes showing up on pancake. I made 4" pancakes.

I might add your eggs and bacon on the side  & eat only 4 to keep the carbs low.

Question? Isnt it wicked sweet with Zero and Stevia? ???

Yes, but it pops out cinnamon & nutmeg flavor. This recipe should be altered to sweetness taste. I used only 3 of each yesterday & it was perfect, so I changed it. Thanks Umpa.
