I also had the same idea to lower the carb. content. So I used 2 teaspoons of Xanthan Gum. Can we say rubber brownies?! :o Did that keep my husband and I from eating them? Of course not!!!!! Now I will start much slower and try 1/4 teaspoon of the xanthan gum.

In regards to Umpa's comment "The recipe is pretty complicated, maybe i can simplify it.Prosperity what do you do bake it like a coffee cake?"

I place the batter into a 9 x 5 bread pan, put the cinnamon mixture on top and then swirl it into the bread slightly. Then bake it for 45 minutes. Comes out wonderful. It is not cinnamon rolls but it sure is yummy.

I would love to see the cinnamon rolls being made. I have made the recipe twice and both times it came out as a batter (like for a quick bread). I still baked it and we do enjoy it but how do you get it to be more doughy and less battery (those are technical terms  ;D !)

These are fantastic! I didn't have leftover zucchini so I used a raw one that I shredded. I also made it into a bread and baked it for 50 minutes. WOW!

You mentioned using Vital Wheat Gluten Flour to help the yeast rise but I missed how much to use!
Would using Whey protein in place of the Soy protein (as long as it has 0 carbs) work as well?

What about cooking with wine or beer. Does the alcohol cook out and therefore reduce the carb count?
