Next time I make your FABULOUS carrot cake Umpa, I will make it in cupcake form. :) :) :)

I've always had a weakness for carrot cake (i.e. eat too much of it). So I've only made it once.
Making it in cupcake portions will solve that problem and we'll enjoy it more often! ;D
What you do today is what matters!

Ok I made the cupcakes and it look like they rose like a cupcake and thendropped . The center was a big hole  What the heck did I do wrong ? I poured the rest of the batter in a 13 x9 dish to see what will happen .

The batter tasted very good but was very runny . It was like regular cake batter until I added   poured boiling water in it . that is when it was runny . Was that suppose to be in the recipe or did I just do something wrong ?

The cupcakes had a great taste but they looked like a chocolate bowl . :( :( :( maybe I am like beebs and just cant bake .

Just take out the water. I keep boiling water around when i am making frosting to thin it out to spread it easier.I checked the original recipe no boiling water. ;)
