Turkey Soup

Hi Umpa,
  I'd love your input on my soup I made this evening.
     Boiled down 1 turkey carcass and picked clean bones (about 1-1/2c meat) then used the broth for the soup.
     1/4 large onion, finely diced
     3 celery stalks, sliced
     12 oz sliced mushrooms
  I coarse grated about 1/2 a small zucchini into my bowl and poured the soup over it.  This made easily 4 servings, maybe more.  Are there any suggestions you can make for lowering carbs?  I know onions are higher, but I think the flavor is important and I didn't use very much.  Oh yeah, and it tasted fabulous since here in Colorado we went from 84 yesterday to 32 today! ???  Gotta love spring in Colorado!

Sounds good to me ,should have made my cornbread to go with it !  Or is it just down south we eat cornbread with our soup ? LOL

  I usually did French Bread with soup, cornbread with chili - dunno if that's a western thing or not!

I am a soup and salad girl.I think your soup is fine.You can add shiritaki noodles to it for turkey noodle or miracle noodle orzo for turkey and rice.cauli rice would be good too.Good job Jen :)
