Title: Low Carb Spinach Pepperoni Egg Muffins

Spinach Pepperoni Egg Muffins
Servings- 4

Ingredients   

   8 eggs (8 net carbs)
   1/2 cup shredded cheddar cheese
   1/2 cup chopped previously frozen spinach thawed to room temp and drained well  (2 net carbs)
   1/2 cup chopped pepperoni
   Butter flavored non stick cooking spray


Directions

1.   Preheat your oven to 350 degrees.
2.   Beat your eggs with a stand or hand mixer.
3.   Squeeze all the water you can out of the spinach by placing it in a clean dish towel and twisting.
4.   Using a fork mix all the ingredients into the egg mixture.
5.   Spray your large muffin, muffin pan well with cooking spray.
6.   Give the mixture a good stir and put equal amounts of batter into 8 muffin compartments.
7.   Bake for 35 minutes or until the muffins are puffy in the middle and firm to the touch.
8.   Remove from oven, wait 3 or 4 minutes then scoop out with a spoon, serve immediately.



  TIP- These keep well for a quick breakfast the next day so make extra and re-heat in the microwave.

These are FANTASTIC!!!

You wouldn't think that a pizza-sounding dish would be so good first thing in the morning... But these are! ;D ;D ;D

These will freeze mouseissue.Just don't leave them in the freezer too long.The egg will break down. ;)

That's good to know, Umpa! :)

But these are never around here long enough to freeze! ;D

If I made larger batches, the temptation to eat too many would be too great.
