I realized today that I did not post this recipe after mentioning it yesterday.
I have enjoyed it for many years but used regular bread crumbs instead of crushed pork rinds.
Using Alaskan Halibut makes the best dish by a long shot.
But since it's pricey, any halibut or other white fish (like cod, tilapia, tuna, etc.) will still be good.

INGREDIENTS
1 1/2 lbs Halibut Fillets (0 carb)
1 cup dry White Wine (4 carbs if you drink the marinade afterwards... ugh! :P)
2 tsp Salt (Sea Salt is preferred) (0 carb)
1/4 cup crushed Pork Rinds (without added seasonings) (0 carb)
1/2 cup Sour Cream (3.3 carbs)
1/2 cup Mayonnaise (0 carb)
1/4 cup minced Green Onions (1 carb)
1 Tablespoon Lemon Juice (or to taste) (1 carb)
Paprika to taste (0 carb)
Combine wine and salt; pour over halibut. Marinate in refrigerator at least 1 hour turning it over every 30 minutes.
Crush 1/4 cup worth of pork rinds.
Drain halibut on paper towels; cover both sides in pork rind crumbs. Hand press with wax paper so they stay on.
Place halibut in shallow baking dish sprayed with Pam cooking spray or use butter.
Combine sour cream, mayonnaise, green onions, and lemon juice in a bowl; spread over halibut.
Sprinkle covered halibut with paprika.
Bake at 400°F for 10 minutes per inch of thickness (measured at the thickest part) or until halibut flakes when tested with a fork.
Makes 4 servings (less than 1.5 net carb each).

I have resolved to start earting more fish instead of meat.
It's healthier and much easier to digest than meat (especially beef).
Ask Doug to post that stuffed grouper recipe.
Will it work for other kinds of white-flesh fish (e.g. cod)?
Since grouper is a warm water fish, we don't see it often in Pacific Northwest grocery stores.

I cant eat pork rinds anymore...sigh. I do love me some fish though. When Im rich maybe I will get some at the grocery store lol! ;D

You could probably use milled flax seed instead of the pork rinds.

Tonight, I went to two stores to buy those ingredients. I bought Milled Flax Seed instead of Pork Rinds. It's Carb 4 and Fiber 4 so subtract/equal is 0 Net Carb. Stevia (in the raw) box is less than 1 gram so is that .6 gram? I couldn't find minced green onion. I will try it for tomorrow. :)

You should count that as 1 net carb like you would with the splenda packets. It is the fillers that they add to it that adds the carbs in this stuff. I so know what you mean!! It is very frustrating. If I'm in a pinch and need a sweetener from the store locally I like to use the Truvia http://truvia.com/ (http://truvia.com/) It is just erythritol and rebiana which is a stevia leaf extract. Mind you I don't like to use it but in a pinch.... My favorite sweeteners are xylitol that I get at my local heath food store and liquid sucralose or Fat To Skinny Zero. A good bit of the things I need to keep on hand I order on line. The shipping for my order is most times way cheaper than the gas I would spend driving around looking for every thing :D If you need any help finding things just give a holler ;)

Turnips actually taste better than potatoes. They have a sweeter zingy flavor.
Potatoes taste like starchy dirt and not much better when cooked. :P
