Doug, these recipes look great! I had a question about the squash soup. I have found that often the thick skin is very hard and stays hard even after cooking. Do you take the skin off when you are preparing the squash for the soup or do you leave it on?

The first two crooknecks were peeled then boiled, when I pureed them I didn't have enough for the recipe so I cut up another (after seeding it) and boiled it with the skin on. I didn't realize that till I strained the squash. I was running out of time so I decided to puree the squash with the skin on and to my surprise it turned out very smooth and creamy. I actually liked it better because the skin gave the puree a nice yellow color. ::)

Calphalon . I get it at TJMaxx alot cheaper than kitchen stores. ;) Sugarfree ketchup or chipote ranch dressing.

These recipes look great Doug, I can't wait to try them! I don't usually watch utube videos, because my internet takes forever to load them, but this was great! You have a really cool kitchen. Hey, give us some good pumpkin recipes! I've got a ton of them coming on too.
