General Discussion / Pancakes and Syrup!

I just made pancakes and they were SO GOOD! I ordered this stuff called Carbquick from Netrition and to me it's basically like low carb bisquick. You all know I am not a great cook but this stuff makes it easy. They were so good, they almost tasted like funnel cakes. Two carbs too, can't go wrong with that. Oh and I used the Walden Farms pancake syrup and that is amazing. It actually takes like real, honest to goodness syrup. So yummy, it felt like I was eating tons of carbs. :) I'm going to try making the other recipes on the box and see how those turn out...should be interesting.

So since my guys have joined me on FTS we are trying all kinds of things. My husband loves Netrition and is currently waiting for Guy BBQ sauce to arrive. Funny, I've been on FTS for 2 years (at the end of the month) and never ordered from Netrition. My guys are on it two weeks and they can't stay off that site.  Is there anything that you buy from there that you love that we should try? Let me know!

My Husband and my Son started FTS full time last Wednesday. Today was their first weigh in and it was awesome. My husband lost TEN POUNDS in one week! (I would kill for that!!) My Son lost NINE, nine just by eating the FTS way. Both are really busy and didn't work out last week or ever. Needless to say they are hooked on FTS and I am SO proud of them. :)

I keep seeing these all over Pinterest and they're killing me. I would love to know if you can work your magic and make them FTS friendly? Remember though we can't use almond flower at my house due to my kiddos treenut allergies. I would love to make these for him now that he is totally on FTS. Do you think it's possible??




Sugar Cookie Bars

Servings: about 18 bars

 

Ingredients

For the cookie bars:

1 cup unsalted butter, at room temperature

2 cups granulated sugar

4 large eggs

2 teaspoons vanilla

5 cups flour

1 teaspoon salt

1/2 teaspoon baking soda



For the frosting:

1 cup unsalted butter, at room temperature

1 teaspoon vanilla

Pinch sea salt

4 cups confectioners’ sugar

5 tablespoons milk

Food coloring, as desired

Sprinkles, for garnish, optional

General Discussion / Husband on day four, already lost four pounds

My husband is DYING doing low carb. It's the funniest thing because before he started he was telling my son how easy it will be and how he hardly eats carbs. I always kinda giggle to myself knowing that he was eating carbs all over the place without realizing it. So day one passed and he was already complaining about not eating carbs but hanging in there for our son. Day two the headaches kicked in along with the flu-like symptoms. Yesterday he was drooling over a Sonic commercial and he hates sonic. He is totally cracking me up. I know he is going thru withdrawals but he must have thought this was an easy thing to do, watching me for almost two years. It's not and it's a decision we make daily to follow our lifestyle. Anyway, this morning I caught him on the scale...in just the three days he has already lost 4 pounds. So now he's strutting around the house realizing that the change is a good thing and worth it. Funny though to listen to him pine away for things he normally wouldn't eat. I can't wait until detox is over and he starts enjoying himself. Official weigh in for both him and Danny is Wednesday so I hope they have lost a bit. I'll let you guys know.

General Discussion / Family FTS! Bringing the kiddo into the mix need ideas

I am so excited about this! Tomorrow I start the ENTIRE family on FTS. They obviously have been going through it with me these last two years and have watched me loving the maintaining FTS life now. So my son, who I have been trying to get fully on board since day one, has finally decided he wants to give it a whirl. So as I tell everyone, "give me 30 days of your life on FTS and if you hate it after that you can quit." We all know that after 30 days you are so hooked and feel so good, you're never going to quit. So tomorrow morning they join my routine but here is my problem, I need some ideas on what to feed kids (13) on FTS. Do you have any quick and easy recipes that are FTS friendly that your kids love. Remember, I am not the cook in the family. Dan will be doing dinner as usual. I just have to come up with breakfast and lunch. Breakfast isn't such an issue, lots to work with there...lunch now that's another story. I usually have lunchmeat roll ups or a jello. I'm not a big lunch eater but my kiddo will be. He's a big kid (6'5" at 13) and eats ALOT so I need to keep him full and happy. Anyway, any ideas would be greatly appreciated!

General Discussion / What do you love about FTS?

I was just in the kitchen pouring myself a Diet Pepsi and I grabbed a SF Mint Patty candy and thought how lucky we all are on FTS. Here I am in the middle of the day, grabbing a piece of candy and my favorite drink and it's okay to do that. I have cheesecake, candy, cookies, pizza, steak, amazing sandwiches (on pitas of course) and it's all apart of our FTS lifestyle. Guilt free yummies!!


So tell me, what is you FAVORITE thing that you love about FTS? Could be a favorite food, favorite part of the program...just what is your favorite?



I have to say I LOVE LOVE LOVE the SF candy, the low carb cheesecake and the ability to drink diet pepsi and still lose weight.

General Discussion / Scales are evil

I am having scale problems again. I really think scales were put on earth to torment us. My scale started acting up three days ago. One day it says I'm down three pounds, the next day it said I was up SIX POUNDS and then today it said I lost 16 overnight. Now I would love to think that somehow the weight-lose fairy visited me overnight and miraculously took 16 unwanted pounds away, but we all know she only visits in summer. :) Anyway, it's pretty obvious my scale is on the fritz. So rather than buy a new one, I'm putting it away. Weighing everyday stresses me out! So I am just going to be true to my FTS lifestyle and weigh on the 23rd at my Mom's. Until then, I will just hope I'm losing and whatever I can get off before Christmas I will. At this point, with the scale acting so wonky I don't even know what I weigh! UGH UGH UGH!

General Discussion / Christmas is hard!

I was at the store last night and every row is filled with yummy food. There was divinity, fudge, cookies, cakes...you name it. Sometimes it just bothers me that all these peeps are eating this stuff and I can't. Of course it always passes and I love what I eat and I don't want to fill sick. But let me tell you in my next life I am coming back as a person that hates sweets! Man, sometimes it would be nice to just be a natural skinny person that can't gain weight! One of those people who say "I have to eat and eat or I will just waste away!"

General Discussion / Giving myself a smaller size for Christmas

I just wanted to let everyone know that I have decided to go for loosing 240 by Christmas and I'm going to need your support. I have been maintaining for the last few months but always regretting not losing the full 240. I have thought for a while that 240 would put me just where I wanted to be and then I could just maintain. So after being wishy, washy about it for the last few months I decided to give it to myself for Christmas. I am so close why not just do it. That will put me at a weight I was in for a short while in my 20'sl and where I always felt the best. I have twelve pounds to go, hopefully I can do it by Christmas.  I started last week and I had forgotten how quickly it comes off. I dropped back to 12 carbs a day and pulled the sugar free candies and it's seems to be just melting off.

Just wanted to let everyone know what I'm up too. :)

Two years ago I wanted to ride a coaster but I was WAY too big to fit in the seats. So when I started on my FTS adventure I set a goal of being able to ride the new Harry Potter coaster, which is known to have really tiny seats. I should have gone sooner but with my ankle issues I had to wait a bit. This morning was the morning and I rode the Hogwarts coaster!! It was awesome and there was plenty of room in the seat! I also rode the Dragon Challenge and those seats were super TINY!! There is no way I could have even gotten a leg in that puppy before FTS! So I posted a ton of pictures on my Facebook but I wanted to share a few here with my FTS family.  Below there is one with my wonderful, amazing husband Dan right after riding the coaster, one of me in front of Hogwarts before I rode the coaster. I am SO THRILLED to be able to do these kinds of things now! Thank you Doug and Umpa for bringing FTS to me and changing my world!

General Discussion / Wii Fit...anyone tried it?

Morning everyone, happy Veterens Day!

I just bought Wii Fit plus on Amazon and it's arriving today. I wondered if anyone has tried it?? I bought it for my son, we are homeschooling and he has to do PE daily. I thought it might be good for me too. I can't do regular exercise because of my foot but they say you can personalize your workout for different areas of your body. Just wondered if anyone or anyone's kids have tried it and if you have any tips??

There are many reasons that I love FTS but this is one of them. Sometimes you're just HUNGRY and need a little more than normal. Yesterday was one of those days for me. I had my usual breakfast, a salad for lunch then when dinner rolled around I was hungrier than normal. My husband whipped up this amazing slider dish consisting of two small burgers, smothered in bacon, onions and cheese. PLUS he made the cheesy garlic broccoli that I love. Then I finished it off later with a piece of banana cheesecake (4 carbs) and it was awesome. Best part....I lost 2 pounds over night. You have to LOVE the FTS lifestyle.  ;D ;D ;D

Yes I know, I'm late to the Jicama party...but it's hard to find here in Orlando. My local Publix is stocking it now so of course I bought it. My husband chopped it up like you would fried potatoes and it was AMAZING! Definitely my new favorite thing! If you are late to the Jicama party like I was, I highly recommend it.  :) :)

Umpa this one would be AMAZING if you could convert it for me. This is from the show Masterchief. It looked amazing! The only thing is my son is deathly allergic to any treenuts so we can't use almond flower in baking. I have posted the "How To" by Ben Starr straight from his web site. Do you think it can be done??



Ben Starr's Pumpkin Carrot Cake with Cream Cheese Frosting

 
This is the cake that I get demands for every October at my annual Fall Dinner Party, where I serve a 5 course meal with each course based on pumpkin. Regardless of what unique, delicious pumpkin dessert I have planned, people always email and call ahead to ask if I’m doing my Pumpkin Carrot Cake. I can’t let them down.

This is also the cake that Gordon Ramsay loved on MasterChef, and that Graham Elliot said gave his mouth an orgasm.

This is one of the most delicious cakes you’ll ever eat. It has a definite carrot cake flavor, but it’s a lot more moist and spicy.

I normally make this as a 3 layer cake using 9" cake pans.  On MasterChef I sliced each layer in half, resulting in a 6 layer cake.  (To better facilitate the slicing, freeze the cake rounds for 30 minutes to stiffen them up, then carefully rotate the cake as you slice back and forth with a long bread knife.  A lazy susan helps, but isn't necessary.)


2 sticks butter, softened (do NOT use margarine)


Whip until the butter is light and creamy.  Then add:


1 ½ cups sugar

½ cup brown sugar


Cream the butter and sugars together until they are light and fluffy, at least 3 minutes, preferably 5.

Then add:


3 large egg yolks


Blend on medium speed for 3 more minutes. Then add:


1 ¼ cups pumpkin puree (canned pumpkin is okay, or microwave sweet potatoes or butternut squash in season, and puree)
1 teaspoon vanilla

 

Blend on medium speed for 3 more minutes.  You should have a thick, airy, lightly-colored batter.  Then fold in:


2 cups grated carrots

 

In a separate bowl, combine:

2 1/2 cups (12.5 oz) all-purpose flour (I use 8 oz AP flour and 4.5 oz cake flour)

4 teaspoons baking powder

1 teaspoon baking soda
2 Tablespoons ground cinnamon

1 Tablespoon ginger

1 Tablespoon ground cardamom

1/4 tsp each nutmeg, allspice, cloves
1 teaspoon salt

(To kick this recipe up a notch, lightly toast your spices in a skillet over medium heat for a few seconds to bloom the flavor, then add to the flour.)

Stir around with your fingers until they’re well mixed. Then sift at least twice through a sifter or strainer.  Sift the dry ingredients into the wet ingredients and mix on slowest speed until combined.


In a separate bowl, (or THOROUGHLY wash your mixer bowl to remove all traces of fat) beat:


6 egg whites

1/2 tsp cream of tarter (optional, but recommended)


To stiff peaks.  Start out on high speed, and as the whites begin to change color from foamy yellow to a whiter color, lower the speed to medium low and whip VERY slowly, adding the maximum amount of air without damaging the protein structure of the whites.  Once you have reached stiff peaks, stop immediately.  (It's better to be just shy of still peaks than past stiff peaks where the white separate into curds when you scoop them.)  Stir 1/3 of the whites into the batter to lighten the batter.  Gently fold the remaining 2/3 into the cake batter until you can't see any clumps of white left.


Divide it equally into parchment-lined, greased and floured cake pans. (I spray my cake pans with canola oil, add a round of parchment or wax paper, spray again, and then liberally flour them, shake the flour around, and dump it out.)


Bake in a preheated 325F oven for 30 minutes (or 50 minutes for deep 6” rounds) or until a knife inserted into the center of the cake comes out clean.  (I spray the tops of my cakes with water before putting them in the oven, and toss a few ice cubes in the bottom of the oven at the same time, to make the cakes bake flatter without peaking in the center.)

 

Remove from the oven and cool in the pans for 15 minutes. Then dump upside down (gently!) onto a cooling rack to cool completely.


I like to chill my cakes before I frost them. They hold up better. 45 minutes in the freezer is usually perfect, but make sure the cake is fully cool before putting it in your freezer or you may thaw out other things in the freezer. While the cake is cooling, make up the frosting.

 

FROSTING:

***Please note this makes enough frosting for a 6 layer cake.  You can halve the recipe if you are only making 2 or 3 layers.***

16 ounces (2 packages) cream cheese (or mascarpone, or lebni/labneh...a Middle Eastern kefir yogurt cheese)

2 sticks butter, softened


Cream together cheese and butter with a hand or stand mixer on high speed until it’s light and fluffy. Then slowly begin to add:

 

1-2 pounds confectioner’s sugar (powdered sugar) depending on how sweet you like the frosting

 

Add the sugar gradually, beating constantly. I like to start with low speed right after I’ve added sugar to keep it from flying everywhere, then increase the speed as it gets incorporated. Continue adding sugar in small batches and mixing thoroughly until the frosting reaches the desired sweetness level. Then add:

 

2 teaspoons vanilla


Beat on slow speed until the vanilla begins to get mixed in, then beat on the highest speed possible for 2 minutes to ensure a light and fluffy frosting.

 

Frost the cake liberally. Don’t worry too much about crumbs getting into the frosting,so it’s not critical to have a perfectly clean frosting job.
