We had some friends over for a cook out and had a bunch of squash left over, so I started thinking....(see the smoke?)....
I made a FTS friendly squash casserole. Here is what I did.

I took the equivalent of 2 squash (precooked w/onion, salt, pepper, butter, and season all) and put it in a round casserole dish. Then, I added about 1/4 cup of sour cream, 1/4 cup of shredded parmesan cheese, 1/4 cup of sharp cheddar cheese. I stirred it all up. For the topping, I took 4 of my GG Bran Crispbreads and put them in the food processor. I had a good mixture of powder, small crumbs and large crumbs. (Truthfully, I eyed the pork rinds, but ended up with the other--KATARY!). I melted about a tablespoon of butter and added it to the crumbs of crispbread and then spread it on top of the squash mixture. I baked it at 350 for 30 minutes and it was yummy!

I can't wait to eat the leftover leftovers!!! : )

Did you know GG sells a product called GG Sprinkles? They are simply the bran crisp breads already ground fairly fine.

I soooo can't wait for Thanksgiving!!! I'm an okay cook! I am sooo thrilled and I'm gonna try these recipes!! Thanks guys!! Anybody got any recipes for Christmas? lol...Thinking ahead, I don't want to ruin my diet over the holidays, ya know!

Owensmath...I made your squash casserole this weekend, and it was delicious!!  This recipe is definitely a KEEPER!!  I didn't have the GG Bran crispbread, so I did grab the pork rinds, crushed them, and used it for the topping!  It worked out great!

oh...my...goodness....in LOVE with this recipe!  It was so delicious and my kids loved it too!  Thank you for sharing   :D

When I made this, I also put a layer of shredded chicken in the mix...so delicious!

how many carbs per squash?

This is what I found but it doesnt seem to match th einfo here.. I dont think Im doing it right..

Squash, zucchini, baby, raw 3.11g   large 0.50g
Squash, zucchini, baby, raw 3.11g   medium 0.34g

Go to the Fat to Skinny book Alex and use the carb counts there. All these website have different carb counts and you will drive yourself crazy using them :)
