Ingredients

One large chicken breast
One slice of ham
One slice of swiss cheese
1/3rd cup sliced portabella mushrooms
1/2 cup artichoke hearts ( I used a brand in a jar )
1/2 cup Bertolli Alfredo sauce
One heaping tablespoon smoked paprika. (be sure to use smoked)
One teaspoon hot red pepper flakes
One tablespoon salted butter
Salt and rough ground pepper
Fresh parsley

Directions

1- Place the butter and sliced mushrooms in a small baking dish and microwave for 2 minutes
2- Cut a pocket in the chicken breast and stuff in the ham and cheese as you would when making a cordon bleu
3- Close the entry cut with a toothpick
4- Salt and pepper the breast well
5- Add the artichoke hearts to the mushrooms and mix
6- Place the breast on top of the veggies
7- Mix the paprika, Alfredo sauce and red pepper flakes together and pour over the breast
8- Tent the baking dish loosely with foil and bake in a preheated 350 degree oven for 40 minutes
9- Remove from oven and let rest 10 minutes
10- Remove the breast onto a cutting board and slice into pinwheels
11- Stir the sauce and veggies and pour over the plated pinwheels
12- Garnish with parsley and serve
