Greek Feta and Black Olive Mini Quiche  
Servings-1

Ingredients  

   2 eggs (2 net carbs)
   6 black olives chopped (1 net carb)
   2 tablespoons crumbled Feta cheese (1 net carb)
   Non stick butter flavored cooking spray
   1/8th teaspoon black pepper
   1 1/2 cup mixed lettuce greens (1.5 net carb)


Directions

1.   Preheat your toaster oven to 350 degrees.
2.   Beat the eggs, pepper and 1 tablespoon of Feta together.
3.   Stir in the chopped olives.
4.   Spray a mini tart pan well with non stick cooking spray.
5.   Pour the egg mixture into tart pan and bake for 20 minutes or until the quiche is firm and puffy in the center.
6.   Remove from oven and let rest on the counter for ten minutes.
7.   Remove from tart pan a serve on a bed of lettuce green with the rest of the Feta sprinkled over the top.

I made these in mini tart pans.I like to keep these or the pepperoni bites in the fridge when I need a quick snack when I am really busy. ;)
