I love snacks! Nothing better than popping a little low carb goodie in my mouth mid afternoon off of one of my snack trays. Here's a new "popper" for you to enjoy!
LOW CARB Cheesy Spinach Puffs

Ingredients:
16 oz. package frozen spinach, thawed and drained
1 cup almond flour
4 Tbsp salted butter, melted
2 large eggs
1/3 cup grated parmesan cheese
1/3 cup crumbled feta cheese
1/4 tsp ground nutmeg
1 tsp kosher salt
1/4 tsp ground black pepper
1 tsp garlic powder
1 Tbsp onion powder
3 Tbsp heavy whipping cream
Directions
1- Squeeze the spinach in a paper towel to remove as much of the moisture as possible.
2- Add all of the ingredients to a food processor or blender and puree until smooth.
Chill for 15 minutes (or longer). Form into 1 inch balls and place on a cookie sheet. Bake at 350 degrees (F) for 12 minutes. Don’t bake too long or they’ll dry out!
Serves: makes about 30 puffs
