Title: The UN-pork rind cupcake

Ok here goes and yes there will be picks .

Icing
2 spoons cocoa powder
8oz. cream cheese
1/2
tsp vanilla extract
24 drops FTS Zero Sweetener.....Taste add more if greater sweetness is desired
2 spoons beanit butter
Mix all til creamy.

Cupcakes
1 1/2 cup almond flour
4 eggs
1/4 tsp salt
1/2 tsp baking powder
1/2 tsp cream of tarter
36 drops FTS Zero Sweetener
1/4 cup sour cream
Beat eggs then add the rest of the ingredients mix well dump in muffin pan bake @ 350 for 11-13 minutes. Oven times may vary.
I am a little unsure on the carb count though. I think it will come in at around 3 per cupcake iced of course.

Beebs, simply re-size the picture in MS Picture manager to 128kb or less....very easy to do. We all want to see your masterpiece  ;D

Hello All,
I just made the cupcakes! They taste good, but I made a mistake and put in baking soda instead of baking powder, then added the baking powder after and mixed and baked. I also didn't mix the eggs first. They fell in the middle, and are not fluffy...but again I made a couple of mistakes. I also used Xylo Sweet instead of Spenda, and love the flavor. It is zero sugars for this sweetner, and the health food store said something about the chemistry of Splenda and the difference with this product. I don't like the taste of Splenda, but love this stuff. No after taste for me. The frosting was good also with the Xylo Sweet, and I would only use a little less peanut butter for my taste! Is there anywhere to get Almond flour cheaper, and the Xylo Sweet, and can I mix any other type of flour to get more fluffy, and offset the cost?

beanit=0 carbs
cocoa=1 carb per tablespoon(which isnt much,an entire cheesecake only takes 2 tablespoons.a little goes a long way)
splenda =1 carb per packet

My 14 year old son helped me make the cupcakes. They are in the oven right now. We added about 1/2 cup of coconut and a little bit of sour cream (to make it rich and moist). Then, we replaced the vanilla extract with banana extract....the frosting is amazing! We can't wait to try the cupcakes when they are done!

My frosting looks darker than Beebs' frosting for some reason. As I said on facebook, I don't do "pretty" but they taste good. (Trying to attach a picture...we'll see if it works).

***Add 24 carbs for your splenda.***Find another sweetner.There is nothing cheap about splenda!It doesnt have to ba xylitol, there are plenty others.

This is the sweetener I used.  It claims to have 0 carbs and it's a walmart product.

OK, what a crock! I read up a bit more. This product I used is supposedly the same as splenda. I then looked up sucralose side effects...do a google search on it and you will be shocked. Medicinenet's web site says that it was discovered while trying to invent an insecticide! YIKES! I need to read more and I think I will stick with xylitol in the meantime.

Well Ive gained 2 pounds so I say splenda is EVILLLL!!!! No more splenda for me. Im not happy with a 2lb gain at all.

Sucralose (Splenda) is a Chlorocarbon.

It is in the same family of chemicals as DDT and PCBs

Sucralose is a chemically altered sucrose (table sugar)molecule in which three of the hydroxyl

groups normally found in sucrose are replaced by chlorine atoms.

I tried it a few years ago and boy did it make me itch!

ownsmath I made these and they were really good but could use a little moistness.  How much sour cream did you put in them?  I want to try that next time.

Try about 1/4 cup Izzet,there isn't alot of liquid so you should be fine ;)

Just made my FIRST batch!! I am sick of every sweet think tasting like chocolate or peanut butter so I put a few drops imitation caramel in my batter and my frosting was just ZERO, cream cheese,  and a few drops of imitation banana. Oh....My....Goodness! It's a cupcake! A real, honest to goodness baked goodie! THANKS GUYS! I never thought I would be able to enjoy this texture again!  ;D

Oh, and I did the math... making a dozen of these is STILL cheaper than a dozen pre-made sugary cupcakes from Publix!  :) Win/win!
