Italian Turkey Sausage Quinoa

Ingredients:

2 cups cooked quinoa
3 medium-sized sweet Italian turkey sausage links, sliced.
1 yellow onion, sliced
¼ cup freshly minced basil leaves
1 tbs oregano
1 tsp virgin olive oil
1 yellow bell pepper, sliced
1 red bell pepper, sliced
¼ cup capers
1tsp balsamic vinegar

Directions:

Heat up the virgin olive oil in a large skillet. Sautee the onion, sausage slices and bell peppers for 5 minutes.

Add the oregano and cook for another 6 minutes.

In separate bowl, combine the quinoa, balsamic vinegar, capers and basil leaves. 

Serve the items in two separate bowls, but combine them on your plate. Serves 4.

 Hi CarlBielenberg77  there are 39.41 carbs with only 5.2 fiber for only 1 cup of cooked quinoa check it out here http://www.nal.usda.gov/fnic/foodcomp/cgi-bin/list_nut_edit.pl  This isn't really FTS friendly..... although it does sound pretty yummy!  Maybe we can sub it with riced cauliflower or something from miracle noodle?  Maybe Umpa would have a good suggestion to make it FTS friendly  ;)  Thanks for sharing

Hello CarlBielenberg77, welcome to our forum, you won't find a more supportive group anywhere on the planet  ::)  Now lets take a look at your recipe;

2 cups cooked quinoa- 78 carbs minus 10 fiber= 68 net carbs!  :o
3 medium-sized sweet Italian turkey sausage links, sliced. 6-8 net carbs
1 yellow onion, sliced   1 cup onion 10 net carbs
¼ cup freshly minced basil leaves
1 tbs oregano
1 tsp virgin olive oil
1 yellow bell pepper, sliced 1 cup bell pepper 6 net carbs
1 red bell pepper, sliced 1 cup bell pepper 6 net carbs
¼ cup capers
1tsp balsamic vinegar

That totals up to just shy of 100 net carbs for this recipe not including the trace carbs in the other ingredients divided by 4 is 25 grams of net carbs per serving. I assume you've read the book and realize that your only a total of 20 net carbs or less per day. This one bowl of soup would use up all of your allotment plus 5 grams.

Don't be fooled by what appears to be a low carb recipe. Take the time to do the counts and you may be shocked at the results.  ;)

Doug's absolutely correct!
I couldn't tell you how many so-called low carb recipes I've see that are really not "low carb" as defined by FTS (=< 20 net grams).
Although some may be lower in carbs than their "regular" counterparts, they are still high in carbs.
What you do today is what matters!
