Dinner Recipes / Delicious Low Carb Mu Shu Chicken

This is a recipe that Maddysmom shared with me from one of her friends  

LOW CARB MU-SHU CHICKEN



Marinade:
•   3 Tablespoons soy sauce
•   1 Tablespoon sesame oil
•   1 clove garlic, crushed
•   1 teaspoon grated fresh ginger (*)
•   1/4 teaspoon cayenne pepper
•   1/4 teaspoon hot sauce - such as Frank's hot sauce

OPTIONAL SWEET, If you want a bit of sweet with the heat add 3 drops FAT TO SKINNY Zero Sweetener

Stir-fry:
•   1 lb. chicken, cut into 1-1/2 inch strips
•   2 medium stalks celery, thinly sliced
•   3 cloves crushed garlic
•   1 Tablespoon grated fresh ginger
•   6 oz. fresh poopake or baby bella mushrooms, sliced into ½-inch strips
•   1 cup sliced green onion  - about 6 onions
•   4 cups sliced cabbage (I used pre-packaged bag slaw mix)
•   8 oz. bean sprouts
•   1 Tablespoon soy sauce
•   1 Tablespoon olive oil
•   1 Tablespoon sesame oil
Mix together marinade ingredients, add chicken and mix to coat.  Set aside while you chop veggies.

Prepare veggies, grate ginger and chop garlic and set aside.

Heat large skillet on medium-high heat with olive oil.  When the oil is hot, add the chicken and stir-fry until just cooked through (probably around 4-5 minutes).  Remove chicken from pan.

Add the sesame oil, then the celery, ginger and garlic.  Saute for 1-2 minutes.  Add the veggies in the following order, stir-frying for 2 minutes after each addition:  mushrooms, onions, cabbage and bean sprouts.  When you put in the bean sprouts - cover the pan for the last 2 minutes.

Add the soy sauce and chicken.  Toss to combine.  Cook about 1-2 minutes longer uncovered and serve immediately.

**I used prepared ginger in a tube from the grocery store and then just squirt out the amount I need.

Wonderful pie!  I used a Dixie Diners' pie crust mix since I had it and hadn't tried it before.  Pie crust was just okay but the filling of the coconut cream pie is outstanding!

I plan to get some of the pepperoni stick next time at store.  I have Johnsonville Deli Bites original summer sausage  http://www.johnsonville.com/products/original-deli-bites.html

Usually my day would be around 16-20 net carbs.  I tend to have a snack of almonds at work and could probably do without, just habit!  I am tracking and increasing my water.

A family member has just started using Efagold Extra Virgin Coconut oil for sinus issues.  I did a search on Amazon and read some of the reviews from users and the benefit from the coconut oil sound amazing.  Hubby and I have started using daily (about 1 teaspoon) this week.  We used it on top of our OMM this morning and it was great.  Nice flavor and melts great.

Curious if anyone else is using this in their daily diet and any benefits they have experienced?

Very good - ordered the cinnamon Skinny Crisps on line.

Chocolate Chip Cheesecake Bars
Filling:
2 8 oz packages cream cheese, softened
2 eggs
½ cup sugar free chocolate chips
¼ cup erythritol + ¼ teaspoon stevia extract or 13 drops of FTS ZERO
1 teaspoon vanilla + squirt of lemon juice
I made my crust from crushed Skinny Crisps Cinnamon flavor cracker and butter
Crust:
1 large egg
⅓ cup erythritol
¼ teaspoon stevia extract
¼ cup butter, softened
1 teaspoon vanilla extract
1 cup almond flour
¾ cup ground pecans
¼ teaspoon xanthan gum
½ teaspoon cinnamon
¼ teaspoon salt

Preheat oven to 350 degrees Fahrenheit.
Mix together ingredients for the crust until dough comes together. Press crust into an 8×8 pan.
Beat cream cheese and sweeteners on medium speed with an electric mixer until smooth. Blend in vanilla and eggs. Stir in chocolate chips. Pour cream cheese mixture over crust.
Bake 25 to 30 minutes or until set. Cool.
