Beebs I'm in po dunk alaska and my stores carry the bobs red mill. it's usually not in the isle with your regular flours.
and all of the bobs red mill comes in bags that you can see through if that makes since.
 
one stores here have them in the oriental section one in the cereal section and the other in the baking section.

so just an FYI for the next person digging for sushi info.

Carbohydrate Count of Basic Sushi Ingredients
Sushi Rice: 35g carbs per 1/4 cup
Seaweed: 5-10g carbs per sheet
Pickled Ginger: 2g per 1/2 ounce
Rice Vinegar: 0-1g carbs per 2 tablespoons
Fish: 0g carbs per piece

I ADORE sushi ! but I can't even make it myself the FATTY way there is no way I could do it this way.  :-\

Beebs did you get a food processor ? I wonder if you could use a blender to chop it up. Just do a little at a time ....
