Title: It's Pumpkin Time Again

It's time to once again make pumpkin everything.  I have been looking at all of the wonderful pumpkin recipes from years past.  There are recipes for pumpkin pie, pumpkin pancakes, pumpkin soup... just to name a few.  I love this time of year.

No doubt! We stock up on canned pumpkin now as it's available. That way we can enjoy pumpkin recipes for much of the year. We eat turkey often as well. Good to see you back mdanziger :)

Halloween is the kick off of "high carb (sugar) season" where people gain the most weight.

Stay away from the carbs, and you'll do fine.
Enjoy some of the many FTS treats instead! :)

I plan to make Halloween shaped chocolates for my daughter. I bought a large pre-sweetened sugar free chocolate bar  to melt & put in the Wilton molds.

There are lots of candy recipes in the Fat to skinny bakery book.I love halloween I decorate my entire house! My favorite holiday,all about happy kids and CANDY!!! :D

Funny Tony! Hope the sugar chocolate bar I got from Trader Joes to melt works in my Wilton Halloween candy molds.

Went to a Jobs Daughters fundraiser breakfast. Told them hold the pancakes & biscuit & add more sausage & bacon. Ate scrambled eggs with 2 tsp sausage gravy over them, 2 sausages & 1 bacon. Drank coffee black because I don't use that powder creamer junk.
Bought Mary a pretty top for cheap at the event. We came home & changed out of our Halloween decor t-shirts & jewelry. Took a pic of us in our yard. You can see how baggy my size 12's are now.

We had a wonderful Day at the Pumpkin Patch at Cal-Poly Pomona. Afterwards we were tired so ate lunch- my Fall chili, fruit kabobs, cheese kabobs & Goulish Pumpkin Muffins. Afterwards we relaxed and watched Dr Who online.

Here is one recipe I put in October Contest:


Halloween Peanut Butter Chocolates

I saw fat bomb recipes online. One idea I had was to make molded chocolates easily for Halloween & keep in the fridge. So I adapted a recipe and made these.
12 net carbs for entire recipe

3/4 cup melted refined organic coconut oil
1/4 cup Peanut Butter (8 net carbs for Arrowhead Mills Organic Unsweetened)
48 drops FTS Zero Sweet
4 TBS Unsweetened Cocoa Powder (4 net carbs)
1 stick melted salted sweet cream butter

Put silicone candy mold on a cookie sheet. Mix ingredients with hand mixer, pour in silicone candy mold. Freeze 30 minutes. Store in fridge or freezer, they will start to melt in hot hands though.

Made pumpkin muffins again but added chia gel to make them more moist and nutritious. Topped with homemade whipped cream & was just like a nice pumpkin pie treat.

Made chia gel and added 1 tbsp to recipe

CHIA GEL

2 tablespoons of chia seeds
1 cup of liquid

In a bowl, add the seeds to the liquid, and whisk them in with a fork or whisk.
After a few minutes you will need to whisk the gel again to make sure  seeds
don’t clump together in the bottom of your bowl. Leave to stand for 10 to 15 minutes.
This enables the seeds to absorb the liquid.  Two tablespoons of chia seeds to one cup of liquid makes a very thick gel.

Can anyone tell me where I might find sugar free chocolate made with sucralose (or other such sweetener) rather than sugar alcohols?  We have probably all experienced the effects of too much sugar alcohol.  Yuck.

I've gotten to where I make my own.    It's really hard to find some locally but you can find lots made with stevia online.  I haven't found any made with just sucralose by itself though.  Even the ones I make at home have a mix of sweeteners.  I just like the taste better.   As much as I love chocolate I just can't take the store bought stuff any more.  Seems like I am getting so much more sensitive to the sugar alcohols these days  ::)

mdanziger like toosweet I make my own with Zero.No tummy issues.If you don't have time to make the individual chocolates you can always do a bark ;) If you need a recipe let me know

anjelhands- If any recipe turns out too dry, add chia gel (about 1 tsp-1 tbsp). That helps moisten recipes. I've even added a little to meat recipes.

Umpa,

Is there a recipe for the chocolate bark in the bakery book?  If so, I will look it up.  If not, please share.  The kids have so much candy in the house, it is tempting to cheat (have not so far) and the Russell Stover's are delicious but troublesome in their own way.  Thanks.

Hi Mark...I hope you don't mind me jumping in

I sooooo know what you mean!!!  I had just one peppermint patty the other day and my tummy rumbled all night  :P :P :P  Geez  only 1??  I couldn't live without my chocolate though  Haha  

Here is Umpa's chocolate chip recipe.  You could make this as a bark with nuts or without...Yummy

Chocolate Chips
Ingredients

2 squares unsweetened bakers chocolate
1/4 cup xylitol
1/4 cup cream

Melt chocolate in microwave safe dish.
Take out of microwave and add xylitol and heavy whipping cream and mix well.
Pour out into 9x9 pan,plate or pie pan and put in the freezer.
Freeze for 3 hours. Once frozen break into pieces and use for recipes .
 A pastry bag may be used to make chips also. Let chocolate come to room temperature and put in pastry bag and squeeze chips out onto parchment or wax paper. Then freeze and use as needed.

I've been experimenting with my magic shell recipe and made some yummy chocolates with nuts.  It's pretty good.  If you melt them down and pour over ice cream it hardens back up...  ;D ;D  Here is what I made last night

4 Tbs coconut oil  (melted)  0 net carbs
4 Tbs butter  (melted)  0 net carbs
2 Tbs natural unsweetened nut butter  (I used Smuckers natural crunchy)  4 net carbs
1/4 cup powdered cocoa  (my can is labeled as 0 carb)  0 net carbs
12 drops of zero or to taste or equivalent sweetener
1 tsp vanilla extract
1 pinch of salt

melt all oils and butters down and mix well.  Add in sweetener, vanilla and salt.  Be sure all is dissolved.   Spray mini muffin pan or line pan with parchment paper.   Crush nuts and line pan or cups with them and pour melted chocolate over top. Put in refrigerator to set.  Once hard cut into serving pieces and store in refrigerator.  


I've seen a ton of ways to make chocolates online.  Experimenting until you get the right mix is the fun part.  I also find that when I use a mix of sweeteners it taste so much better to me.  Especially when working with chocolate.   ;)    I found an new fudge recipe I'm anxious to try for the holidays.  I'll post it when I get it down right  :)

Hi, Mark! :)

I've made the chocolate chips recipe MANY times using FTS Zero.

If you want to avoid tummy problems from sugar alcohols (like xylitol),
in the chocolate chips recipe, substitute 12 drops FTS Zero for the 1/4 cup xylitol.

Yes my recipe for homemade chocolates.You just add nuts or coconut and spread it out on a cookie sheet and put it in the freezer.Then just crack off a piece when you want it .I also use this for chocolate chips.With Zero there are no tummy issues.The peanut butter cups are really good too ;)
