Product Reviews / Re: New Almond/Coconut Breeze
« on: March 08, 2012, 08:23:58 PM »
No ice cream, Umpa. The cows are fine in the cold weather. Put a few animals together in a barn and they make their own warmth just from collective body heat. Our barn has fabric walls made of stuff like a tarp and they can be rolled down for ventilation. It has to get very cold to close the walls all the way because the cows keep it warm and need the fresh air for ventilation.

However. my hands are another story. It doesn't work to wear mitts for milking and my hands get cold. But I warm them up around the milk pipeline because the milk is so nice and warm when it comes out of the cows. :)

Well, the answer would be "yes" because we ignore sugar on the label and just pay attention to net carbs. However, I'm curious - what food would have 0 carbs and 12 g sugar?

Breads and Crackers / Re: Flax, Sunflower, Cheddar Crackers
« on: February 18, 2012, 08:23:34 AM »
I use Stock and Barrel roasted, unsalted sunflower seeds, available at President's Choice stores in Ontario, Canada. The label says 7 gm carbs, 6 gm fibre per 1/3 cup, so 1 net carb per 1/3 cup. There was a big discussion about this in November 2010 when Katary posted a recipe on the thread Katary Bakery's Sunflower Seed Crackers. At that time CaliGirl phoned David's Seeds and they admitted that their label was wrong, showing net carbs with the fibre already subtracted, so fibre shouldn't be subtracted again. However, Katary was using Kroger seeds which claim 4 net carbs per cup. Here in Canada, Stock and Barrel is the lowest for carbs.

Breads and Crackers / Flax, Sunflower, Cheddar Crackers

It has been a year since I posted a recipe for Golden Flax Crackers. Here is the newest version as it has evolved in the meantime.

Flax, Sunflower, Cheddar  crackers
1 cup chopped sunflower seeds, (roasted, unsalted)  3 carbs
1 cup golden flax meal  0 carbs
1/2 cup (or more) shredded old cheddar cheese  0 carbs
almost 1/2 cup water

Preheat oven to 425.
Chop seeds with S blade of food processor. Mix flax and seeds in a bowl. Add cheese and fluff up to coat cheese with dry ingredients so it doesn't clump together. Add water bit by bit, stirring each time. Don't let it get too wet or it will burn, just enough water to make a dough. Line a 12” x 17” cookie sheet with parchment paper.  Put half the dough towards one end of cookie sheet. Cover with another piece of parchment and squish down, then roll flat. Get it into the corners and all the way to the edges. Try to get it even thickness, not thin at the edge and thick in the middle. Then do the other half, blending the two halves together in the middle. When it's all nice and thin and even, score with a sharp knife into large crackers. I do 3x4 which makes 12 crackers about 4x4 inches.
Bake 10 minutes at 425. Cut the score marks again to separate, and cool on wire rack. Store in airtight container,   separating layers with paper towels.
3 carbs for 12 large crackers

VERY IMPORTANT: These crackers are wonderful right out of the oven, once they are cool. After that they go a bit less crispy so, right before eating,  I pop them in the toaster for 1 minute and 15 sec to crisp them up again. I use them instead of bread for open-face sandwiches, and I like them better than OMM or wraps. I love the toasty flavour and crispy texture, and find them much more palatable than GG! Also much lower carbs than GG, if you can find the right seeds.

General Discussion / Re: Grinding flax seeds

I chop sunflower seeds and pumpkin seeds with the S blade in the food processor with great success. I once tried to do sunflower seeds in a coffee grinder and just ended up with a paste, so I got rid of the grinder. I'm wondering if the S blade would work to make flax into flax meal.

Has anyone had success grinding flax seeds into flax meal? Does it work with a food processor? Thanks.

I’m back! I’ve visited the forum occasionally over the past few months but haven’t posted. I lost over 75 pounds in about 10 months, and have kept it off for about a year. That’s the true miracle of FTS. By always being mindful of carbs I didn’t gain the weight back. In my pre-FTS life I lost 40 pounds three times and always gained it (and more) back quickly. Making FTS a lifestyle means avoiding the carbs that cause the gain. Now, I have to get more strict with myself about staying under 20/day to lose the remaining pounds. See you again soon!

Another Saturday - and no loss to report. I would really love to get below the 80 pound mark but it's not happening yet. But my clothes seem really big - good thing I have draw strings on the waist or they'd be falling down.  :o Also, I discovered something this week, A&W diet root beer in cans. It's great, finally a drink without that chemical aftertaste. I've avoided everything but water for that reason, but this root beer is really good.

What is a "stick" of butter? Here on the farm it comes out of the churn in lumps and here in Canada it comes out of the store in pounds, but no sticks.

It's Saturday, and I'm back. I've been off the forum for a couple weeks, back to work now. I've lost another 1.2 pounds, for a total of 78.4 pounds. SherriPie's ticker is inspiring me to get more serious about my FTS efforts. Keep on keeping on!

Umpa - can you please post a link for information about flax needing heat in order to release the omega? I tried looking it up but all I find are articles about how heating flax will cause the formation of a harmful chemical.
