Title: The wonders of a store bought BBQ chicken
Post by: ausgirl on February 24, 2011, 07:14:31 PM
Last night (after a hard day at my new job), I had some errands to run after work (one of which was a trip to the supermarket) and so didn't get home till 6.30.  While at the supermarket I picked up a ready-made BBQ chicken.  I checked the carbs - 0, thankfully.

Last night, I had some with some leftover cauliflower and broccoli with cheese sauce.

Today I had it in a warmed tortilla (3 carbs - Mama Lupa's tortilla, I find them the best), made a chicken salad with some mayo and put had with some lettuce for lunch .

Did not getting home till late again(!), I just made a quesadilla with cheese, chicken and some salsa (1 carb per tbsp) and sour cream (2 carbs per tbsp) on the side......SCRUMPTIOUS!

There is some leftover chicken salad (I made extra at lunchtime) for my lunch tomorrow....

Im so singing the praises of a store bought chicken right now!

Ready-to-eat store bought roasted chicken is a staple at my house.
There are so many low carb things you can make with chicken, it's mind boggling.

I get pre-cooked roasted whole chicken at Fred Meyer (Kroger).
The seasonings they use are subtle but very good.

If the store you buy your's from uses only seasonings (and no sugar), you're good to go.
Some stores will use sugar as one of the seasonings or a sauce that has sugar... Avoid those chickens!!!

As always, read nutrition labels completely and carefully.

This post is a great example of the advice in FTS discussing meal planning. It's so easy to whip up meals when you have the ingredients at you fingertips. We always have something in the fridge like a roasted chicken, turkey, beef roast, pork roast, ham etc.... It's easy, every few days chunk something in the oven and your set for three or four days  ;)

Hey Tony....  Congratulations!

I totally agree Doug,
a week or so ago chicken breasts on the bone were on sale at my local grocery store, so on a Sunday night, I roasted 5 of them and I was set for either a quick dinner when I got home and/or a healthy lunch!

WAY TO GO TONY! Congratulations!

I always cook a few extra chicken breasts and put them in a bag in the freezer for those days when I do need something in a hurry.  You can do so much with cooked chicken.
