 :) I'm sure this has probably come through here a few times. I wanted your opinion on how to improve this recipe I was given... And make sure I'm not flubbing. I knew you were the girl to ask.
One cup heavy whipping cream
One heaping tablespoon peanut butter

Whip until firm, refrigerate drizzle with sugar free chocolate syrup.

Every time I see them on television or read about the I think of Doug and Umpa. You guys HAVE to try to get a hold of this family. I really think you could help them!!  I think they want to get the weight down, they just don't have a clue nor do the have the tools. If you could get through to them... I think it could make a HUGE leap in getting your message out there to an even larger audience.

Breakfast Recipes / Jicama Roast Beef Hash

 ;D :D ;D Can you all tell I am wearing my excited face this morning?!? I made two batches of hash, one with shredded potatoes and one with shredded Jicama and the Jicama won hands down!

Recipe:

Peel and Shred Jicama. Lightly fry in pan with a small amount of salted butter and a teaspoon of Olive Oil. Dice left over Roast Beef and mix in with the Jicama. Salt, Pepper, Garlic Powder or Seasoned Salt.  Flip as needed, not too often or it can become gummy.

Barrington Mints
 Makes 150 mints
 
Ingredients:
 8 ounces soft cream cheese (I used Philadelphia regular)
 6 tablespoons soft butter (I used unsalted)
 3/4 teaspoon pure peppermint extract (NOT mint extract)
 2 pounds sifted powdered sugar
 1/2 teaspoon vanilla extract
 3 drops red food coloring (Mine is pretty strong, so I used only one)
 
Method:
 Melt the cream cheese with the butter in a heavy 3-quart saucepan over low heat, stirring constantly with a wooden spoon.  Turn off the heat, leaving the pan on the burner, and stir in about 1 1/2 cups powdered sugar, food coloring, and vanilla. (My note: Add peppermint here as well.)  Stir in the rest of the sugar until well blended.
 
Line a large baking sheet with wax paper.  Push mint mixture into a pastry bag, icing syringe or squeeze bottle with a decorative tip.  Create desired shapes for mints.  Let set 1 hour.
 
Store between sheets of wax paper in an airtight container in the refrigerator for up to 1 month, or in the freezer up to 4 months.  Do not store at room temperature.

Lean On My Shoulder / Stallllllllll

 >:( It makes me very cranky to stall. I have been at this weight for over three weeks ( I only weigh once a week). I can't possibly drink more water or have a much lower carb intake. Could it be a Calorie issue? I have been a on a Diet Rootbeer with a splash of cream bender. Surely that couldn't make me stall this badly, right?? Oh, and I think Breyers and their "Carb Smart" ice cream bars might just be evil. 12 sugar alcohols. I think the one I ate might have messed with me. Maybe I am just chasing phantoms... who knows? I have missed a few days of walking due to rain though. Maybe??
 Please do the "LBS (we pronouce that "lubs" here) Be Gone" dance for me. I literally sneered at my scale today. It's summer break and the kids are afraid a crazy lady snap could be pending. On the bright side, I can paint my own toenails now...without painting my toes.  ;D

Ask Umpa / Hoecake?

My Cami has been asking me to make this, and to be honest... It is a weakness food for me and I havent had the heart to try yet. I have will power, but I am not made of steel. lol Is there any hope?

cup self-rising flour
1 cup self-rising cornmeal or Jiffy Cornbread mix
2 eggs
1 tablespoon sugar
3/4 cup buttermilk
1/3 cup plus 1 tablespoon water
fry it in a combination of butter and crisco.

 I know you all have seen me around for awhile.. first as a lurker now an official FTS girl! I am a Married Mom of four. I found Doug's book in the library about a year ago. I thought about what I saw there, checked it out a couple more times... then bought my own copy. I found Doug on FB and watched his cool FTS posts.
 I was a "chubby child" and toyed with bulimia as a teen and was very small at that point. I hovered between 105 and 115 all through HS I am 4'11 so that wasnt a drastically low weight for me. I gained 100 pounds after I had my first daughter. She is 19 now. About 12 years ago I did Adkins and met with immediate success, but my body turned on me after about ten weeks. I got very sick to my stomach and turned back to "comfort foods". I quickly regained everything I had lost plus a pound or two more and I followed this up with a pregnancy.
 I had been considering that I needed to get a handle on my weight for a long time, but I always made excuses. When people would talk to me about my weight and the health concerns (My Daddy died when I was 19 due to Heart Disease) I just said that I would rather die happy than live to be a hundred hungry and miserable. I am an avid baker and love Southern cooking. In February two things happened, I read Paula Deen's "It Aint All About The Cookin'" ... which moved me in a way I will never be able to fully explain... and I attended my niece's wedding. I had to buy a new outfit for this formal wedding. I was in the "Avenue" (a shop that caters to full sized ladies) and I had to buy the largest top they made. I was also in a size 26 pant. ( I refused to weigh at that point) When I saw the pics from that day... it was that "lightening bolt moment" people often talk about. It took me a few weeks to work up the courage and formulate my game plan. I started a food journal and started stalking Doug's posts on Facebook.  (Sorry Doug!)
   Anyway, I am TWELVE weeks in! On March 20th I was 254 pounds. Today I am 211 I have gone from a size 26 pant to an 18. I just bought my first size 22 blouse... and I need a new bathing suit!!  ;D  Here I have found the tools and support I needed to make this change in my life. I feel so blessed to have been led to this incredible group of people. I hope you all know how much I value you and what you contribute here.

Booze! / Low Carb Cocktails

This weekend my cousin made a batch of drinks for us girls to enjoy. It was fun, fruity and I THINK very low to no carb. What are your thoughts guys?

Watermelon Vodka
Strawberry/Watermelon MIO
Water
Ice

It was like sipping a glass of Jolly Rancher candy. It seemed too good to be true, so I approached with caution. Any thoughts or input?
