Hi Umpa,
I have a recipe that I want to run by you for tweaking to keep within a reasonable net carb count, if that is even possible! Someone posted it on Facebook and I have made it several times before FTS! I am not sure if it will even turn out using the alternative condensed milk recipe, but thought I would try it.

Ingredients:
1 can of sweetened condensed milk (14/oz) (Note: I am going to make 2 batches of Doug's condensed milk recipe and use that to make 14 oz.)
1 8 ounce tub of cool whip (sugar free variety)
1/3 cup of lemon or lime juice
1 8 ounce package of cream cheese
Directions:
Leave cream cheese out for a couple of hours to get to room temperature. The cream cheese should be soft and smooth (this is important or recipe will be lumpy). Once cream cheese is softened put it in a mixing bowl and add sweetened condensed milk and cool whip. Mix until well blended and smooth. Lastly, add lemon or lime juice and mix on low speed about 2 minutes. Pour ingredients into mini muffin pans (mine were silicone). Refrigerate for 1-1/2 hours. Served chilled. (I put mine in the freezer although the original recipe never mentioned that.)

I would appreciate your thoughts and tweaks on this. Thank you

My input.....:) there are 1.5 grams of carbs in each tablespoon of sugar free cool whip! OUCH!!!!!!! I'd replace the cool whip with home made whipped heavy cream sweetened with FAT TO SKINNY Zero Sweetener. Next I'd replace the cream cheese with Philadelphia Neufchatel Cheese. It will be right next to the cream cheese. Of course use the condensed milk recipe that Umpa developed in the bakery book and you're good to go! :)
Here's a link to the cheese- http://www.walmart.com/ip/Kraft-Philadelphia-1-3-Less-Fat-Neufchatel-Cheese-8-oz/10295547 (http://www.walmart.com/ip/Kraft-Philadelphia-1-3-Less-Fat-Neufchatel-Cheese-8-oz/10295547)

Thanks Doug! Those carbs are sneaky - didn't realize Sugar Free Cool Whip is so low carb unfriendly. Thanks so much for doing a remake of this recipe for me. ~ Cheers

Hi, MyPath2Skinny! :)
This is why reading nutrition labels is VERY important.
Carbs are lurking almost everywhere out there.
