I had these little gems for dinner tonight. Oh goodness they were really good. ;D ;D
I found the idea here: http://www.salad-in-a-jar.com/family-recipes/bacon-wrapped-jalapeno-chicken-bites (http://www.salad-in-a-jar.com/family-recipes/bacon-wrapped-jalapeno-chicken-bites)
I changed mine up a bit because I didn't have any cream cheese. I did have some laughing cow garlic and herb cheese that I needed to use up before it went bad. (we can't have that now can we ::) ) results...... Delish!!! My daughter and I both agreed though that my pimento cheese with jalapenos would be so much better in this. ;) http://www.fattoskinny.net/index.php?topic=2876.0 (http://www.fattoskinny.net/index.php?topic=2876.0) Also I didn't cut mine in half like it talks about in the original recipe. My tenders where pretty small to begin with. I didn't grill them either...I was afraid they would fall apart so I put them in the oven at 350 for about 20-30 minutes. They may have done well after all on the grill. I will be trying them that way the next time. Everyone in the house gave them a thumbs up :D
With the laughing cow cheese it made these 1 net carbs for two. I probably could have used a little less in each one though ;)

I love the cheese idea with jalapenos ;)

These are very tasty left over cold in the fridge by the way ;) ;) Enjoying my breakfast this morning ;D
Umpa the jalapenos really make this recipe. They really aren't overly spicy in case someone is wondering. Not hot at all ;)
