Cinnamon Coffee Cake Swirls
Ingredients
1 cup soy protein powder
1 ½ cups hazelnut flour
1 1/2 cups almond flour
¼ cup Crisco
¾ cup of water
1 teaspoon salt
8 tablespoons of xylitol
3 eggs
1 package yeast(1/4 hot water to dissolve yeast in)
For cutting board
*1/8 cup almond flour mixed with 1/8 cup protein powder to roll out dough on cutting board
Wax paper
1 egg
Filling
¼ cup butter softened
3 tablespoons of cinnamon
3 tablespoons xylitol
Preheat oven to 350.
Grease cookie sheet.
Dissolve yeast in ¼ cup hot water (110 degrees)
Melt Crisco in a measuring cup.
Add 8 tablespoons of xylitol and salt to measuring cup with Crisco.
In a medium size bowl put soy protein powder, hazelnut flour, and almond flour. Add ingredients in measuring cup(Crisco, xylitol and salt) to flours.
Beat 3 eggs and add to flour mixture.
Add ¾ cup water to mixture and mix well.
Once yeast is foamy add to bowl. Mix well.
Mix 1/8 cup of almond flour and 1/8 cup protein powder. Put wax paper on cutting board. Spread out flours on wax paper on large cutting board.
Take dough ball out of bowl and place on board.
Cover in flour and roll out to ¼ inch thick with rolling pin.
Mix filling ingredients (butter, cinnamon ,and xylitol)and spread out over dough. See picture.
Now take edge of waxpaper and roll dough on to itself into a jellyroll.
Cover with one beaten egg and sprinkle with cinnamon .Slice into one inch slices and place on cookie sheet.
Bake at 375 degrees for 20 minutes. Cool. Store in refrigerator in Tupperware.
Carbohydrate Count: 1.5 per serving(20 servings) (30 carbohydrates for total recipe )

How much yeast equals a packet? I bought a cannister and it's not in packets.

1/4 ounce of yeast is what it says on packet, i know you cook so let me know what you think.

I utterly despise yeast. It never works right for me. I made my bread sticks with milled flaxseed and they look like giant turds sigh......I need a personal helper. At least I havent hurt myself.

i CANT FIND HAZELNUT FLOUR ANYWHERE. oops anyway Im going to substitute almond flour and a little milled flaxseed. Do you think that will be ok? I hope so lol. It's all I have!

Hi Again!
I was wondering since you used the Hazelnut flour, I thought this the other day, if anyone has ground any other nuts to cook with. I think the pecans are low carb too, and I thought of trying them! Is the Hazelnut, just nuts ground like the Almond flour? I don't care for the soy flour taste, but would like to add another nut flour.

I just used 2 cups of almond flour and 1 cup of milled flaxseed. I think they were good that way. I still havent found hazelnut flour...

i think pecan or walnut flour would be great sa_parrow,but measure and count the carbs.

Beebs, my small food processor works well for grinding the Almonds, and I only grind what I am using to keep it fresh! I also have used my blender attachment for making smoothies!! ha ha it worked

So....you can make your own flour by grinding up the nut until it's very fine...like in a coffee grinder? That's amazing...I know so little. lol

I looked at a small food processor LOL! Was $100 cuisinart as if that's any better than a black N decker!

Yikes! I guess I'd rather spend the money on the food than equipment...so I'll get the almond flour. lol

You mentioned using Vital Wheat Gluten Flour to help the yeast rise but I missed how much to use!
Would using Whey protein in place of the Soy protein (as long as it has 0 carbs) work as well?

I just found a small blender & chopper made by Biggest Loser for $19.99 at Ross for Less. I just love it and it's suppose to be able to grind coffee and nuts, etc. Haven't tried that yet but for the price and it's compactness it's working great for me...might want to see if you can find one Beebs.
