Title: CHERI'S CREAMY SOUTHWESTERN TACO SOUP

I don't know where they got the carb count from...

CHERI'S CREAMY SOUTHWESTERN TACO SOUP

1 pound ground beef
1/2 cup onion, chopped (6 carbs)
2 cloves garlic, minced (2 carbs)
1 tablespoon cumin (2 carbs)
1 teaspoon chili powder (.3 carb)
8 ounces cream cheese, softened (9 carbs)
2 10-ounce cans Ro-tel tomatoes, undrained (tomatoes with green chilies)
2 cans beef broth (2 carbs)
1/2 cup heavy cream
2 teaspoons salt, or to taste

In a large soup pot, brown the ground beef with the onion and garlic; drain. Add the spices and cook a couple minutes. Drop the cream cheese in bits into the meat. With the back of a big spoon, smash it into the meat until no bits of white remain. Stir in remaining ingredients and heat through.

Makes 8 cups or 6-8 servings
Freezing not recommended

Per 1/8 Recipe: 271 Calories; 22g Fat; 13g Protein; 5g Carbohydrate; 1g Dietary Fiber; 4g Net Carbs

2 cans of Rotel.  ;) High carb.Can be made low carb though ;)

Ah, yes! I was getting lazy by the time I got to the Rotel! Didn't remember to check the carbs there before I finished the post. It does look like a fun recipe, though.

TooSweet is the southwest girl.I think her hubby lives on tacos :) She has probably already done this recipe! If not i will! I will take a hit for the team!! :D :D

MMMM... gonna have to try this when the weather cools off.  I think I'll swap out chorizo for the ground beef though! Spicy!  :D

I'm doin good Andrea!  Thanks for asking!  How're you?  I'm still stuck weight-wise, but I do know it's my own doing.  I've just been dreading going back thru detox  :o  I'm happy, I'm not gaining and maintaining where I'm at, but I've still got a little way to go before I can say I'm where I want to be.  A size 12 is nothing to sneeze at, especially when I was a (very) tight 18 when I started!  :D

Oh Sarah how did I miss this!!!  I love Linda Sue's recipes as well.  I've actually had this one on my radar for a while now.  Thanks so much for posting it  ;)

Umpa you are so right about my hubs...Haha   I believe he could eat a taco every day of the week  ;D ;D   I'm so going to make this when it cools down  :)

I too have been turtle-ing along for LONG time.
In fact, my weight was stuck for months until recently I dropped another 5 pounds.

Always remember that FTS will make and keep you much healthier even when the scale is frozen!
So hang in there!... We're all right here with you! :) :) :)

I have made this several times, only I cut the recipe in half.  This soup is yummy, especially if you like things spicy.
