I use Xylitol generally, but I do find that it doesnt dissolve like, say, powdered sugar;  so I tried Truvia in equal substitutiion and had to throw away 2 doz peanut butter cookies!!!  It was horribly bitter.  For liquids I use xylitol, and a Now plus which is xylitol and stevia(i think).  I find that just right for coffee or juice type drinks.  However, I dont know how to bake with the sweeteners... I cant use any artificial type like aspartame, sucralose or even splenda, if I have a choice.  Can you give me some pointers on this matter?  I am also Gluten Free.  Thanks,  Margot

Thanks,   TooSweet and mouseissue,  nice of you to respond so quickly.  As I explained on a previous post ...I have celiac also and juggling that with low carb gets a bit frustrating at times.  So, good to know the carb count on that bread.  I just finished baking the Carrot Cake  I had to tweak it a bit as it turned out too oily and too soft ..... I reduced the oil to 1/2 c. And added more almond flour 1 c. -it turned out super.

I am allergic to the artificial sweeteners, am using xylitol at present.  I would love to make my own jello but can't figure out how to flavour  it to my taste....such as raspberry, cherry, etc.  I don't really want to use Koolaid as I am not sure of the chemicals init.  Where can I buy concentrated natural flavours?  Or can you suggest another way.  I am gluten free and diabetic.

Another question, tho it isn't under this topic heading.  In your spinach bread, can I use fresh spinach ....maybe wilted?  Thanks for any help.   Margot

Thanks for replying, it is nice to have support.  I hope this is the correct way to reply to you?  Iam hungry bcz I don't have a large selection of foods as yet -  mostly proteins, which I have always enjoyed.  My problem has never been sweets - just real heavy carb infestation!  So I keep looking for quick fixes that r low carb, yet GF!

I was diagnosed celiac 1year ago and attacked that problem to where I now test negative.  Several months ago I was also diagnosed per-diabetic.  I take no medication but am keeping watch over my blood sugar.  I tended to go hi/low if I wasnt careful wih my eating.  Recently my sugar has gone up and doesn't drop back down like before so I went looking for a solution that I felt I could manage. FTS sounded just right....so I am on Day 2---very hungry, but my sugar is already down.

I have been reading the various posts and checking stuff out on web sites (hours now) and I would love to get feedback from everyone especially on the GF/Diabetic front.  Especially recipes and shortcuts - everything is so very expensive buying online.
