Something really special for dinner...Ceder plank Salmon!

Would you like to cook something really tasty, simple and makes a great presentation? Try this recipe...I cooked it last night and used Steelhead trout but Salmon will be just as great  ;) An important ingredient in this recipe is the Ceder plank or shingle. My house in the Florida keys is sided with beveled ceder siding and I did some repairs this year leaving me with a dozen scrap pieces abot 18 inches long each. Perfect for this recipe. The ceder is untreated. Many lumber yards sell ceder shingles in the North East and I'm sure if you ask niclely they'll part with couple for you. You can also buy ceder planks from restaurant stores. Ceder Plank Salmon and Edamame



Ingredients

Nice Salmon or Steelhead filet, skin on
Generous amount of Montreal Steak Seasoning
1 Tablespoon of Fennel seeds
1/3rd cup melted butter
Bag of frozen edamame
1 tablespoon salt
Ceder Shingle

Directions

1-Soak your ceder in a bucket of water for an hour
2-Sprinkle a generous amount of Montreal Steak Seasoning and the fennel seeds over the fish and let set in the fridge while your wood is soaking.
3-Dissolve a tablespoon of salt in 1 cup of hot water
4-Place the frozen Edamame in a microwave safe bowl and pour the salted water over the pods
5-Cover the Edamame and microwave on high for 5 minutes
6-Take the Edamame from the microwave and mix around to coat with more salty water, strain and place in a serving bowl...sprinkle with more salt.
7- Heat your grill to high heat
8- Place the fish skin down on the plank and place on the cooking grate in a very hot grill, close the lid
9- Melt the butter in a measuring cup and return to your grill
10- Cook the fish until very firm when pressed with your utensil, don't worry if the plank starts to burn and smoke around the edges, you want that smoke to embed the ceder flavor
11- Place the entire plank on a serving dish and drizzle the butter over the fish
12- Serve with the Edamame pods

TIP- Edamame pods are soy pods. When you bite the pod a soy nut will pop into your mouth, the average pod has 3 nuts and the salt on the outside of the pod enters your mouth as you squeeze out the nuts...discard the empty pod.

Oh wow! Mary & I love Salmon.  Does the cedar add a special flavor?

I would say not, if you don't have a gas grill and would like good hot grilled flavor another option for you would be a cast iron stove top grill :)  One side is a grill and the other side is a griddle. Great idea!!!! I might have a cast iron grill somewhere. We picked up several cast iron pieces at a yard sale years ago & refurbished them. They are tucked away in camping stuff.

If you haven't tried the ceder plank BBQ yet you should. The ceder puts such a delish aroma into the foods. You can use this method for chicken cutlets, turkey cutlets, shrimp etc... Excellent presentation  8)
