Tortilla soup

Chicken Tortilla Soup
like Max and Erma’s®
I’ve seen the other recipes out there on the Web, but
once I tasted this soup in the restaurant, I knew what
was in it and knew those recipes were wrong! This is so
much simpler and, I guarantee, closer to the original taste.

Serves: 8
Prep. Time: 0:20 or more

1/4 cup butter OR margarine
1/4 cup all-purpose flour
3 cups chicken broth
1 cup milk
8 oz. Velveeta process cheese food - cubed
10 oz. can Ro*Tel® tomatoes and chilies
2 cups cooked, shredded chicken
1 tsp. cumin
1 tsp. chili powder
salt and pepper – to taste
flour tortillas – as needed, about 4 - 6
shredded Colby Jack cheese OR Mexican blend cheese

Umpa  what type of flour would work here?  Soy?  I would use regular cheddar too....no tortillas either

About a 1/8 to a 1/4 of a teaspoon of gluccomann flour to subsitute for the 1/4 cup of  white flour.Its a great thickener.One bag will last you a year.I also use it to coat my  meat for oriental recipes.Like bang band chicken or General Tsos chicken(both recipes on forum) It give you that thin crispy coating that stands up in the fridge for leftovers.But with sauces and gravies alittle goes a long way. ;)

Hi Beth! :)

Besides the flour, be careful with the Velveeta... It has 3 net carbs per ounce.
In this recipe, that would be 24.

Instead, I would use shredded medium cheddar cheese along with some sharp cheddar and a little heavy cream.
These ingredients are all 0 net carbs. ;)

If you really wanted some tortillas in it, use low carb tortillas in place of the flour ones.
As always, be sure to count the carbs.
