I've been seeing articles on coconut water. Can anyone tell me if it is all it claims to be. I've read that it's good for just about anything that ails a person. That it even helps with weight loss. Just wondering.

Lean On My Shoulder / My cholesterol

I want to talk about my cholesterol and my weight gain. I went to the doctor a couple of weeks ago and these are my numbers.M y current weight is 205 from 200.  I have gained 5 pounds and my cholesterol is at 205. I told my doctor I want to try to lower my cholesterol with diet and exercise. My blood pressure is 120/70.  I do take a blood pressure pill.

I have to say I am not eating the way I should be. I could blame it partly on my husband for not encouraging me and bringing food into the house that I don't need to eat. But, I am not. Because I am not going to blame him entirely. I know in part I am to blame to because I should be able to "just say no" but I don't have the want to, yet.

That's where all of you are gonna need to comment and help me to stay on course. I can't get on here as much as I would like to but gonna try real hard to keep you all informed.

I am 61 years old, my knees hurt when I try to exercise and I get out of breath when I walk so please ideas are needed.

Lean On My Shoulder / Good Morning

As you know I started back to the Fat To Skinny program a couple of weeks ago. I haven't posted anything until now because for one, I have been too busy and too, embarrassed to say just how bad I have been doing but I realized that I won't get any help if I don't get on here and speak out. I want to get help and I know the friends on here are very supportive. Please help me out. I have gone up to 206 and when I saw that number this morning I said "THAT'S IT" I am so discouraged this morning. This is the first time I have weighed myself since I started back a couple of weeks.

Breakfast this morning was 2 eggs scrambled with a slice of American cheese (all I had till I go to the store) with 6 slices of pepperoni. 16 oz of water.

Lunch will be pepperoni with American cheese on a few ritz crackers (I know the crackers are not good) a banana and a small bag of veggies (broccoli, carrots and cauliflower). Unsweet tea

Not sure about dinner yet.

As you can see not everything I mentioned is good but my cubboard is bare. :)

I am worried about not getting enough fiber so I am taking metimucil every day.

I hope there is someone out there that can help me out. I was on here back in January and was doing really good. I had lost 8 pounds. Then in February some issues came up and I rebounded back to my old ways. I don't like the way I feel or anything about myself. I am 60 pounds over weight and I am beginning to think I am just going to be this way. My husband doesn't like the way I look and every morning I wake up telling myself that today things are going to change, but by the end of the day I have gone back to my old ways. SUGAR! SUGAR! SUGAR! is my biggest downfall. I got off sugar in January but for some reason I am having a really hard time forgoing the SUGAR this time. Can someone please help me get back on my journey I was once on. I have a personal trainer that I started with at the beginning of April, but I got sick at Easter and have been sick ever since with allergies and bronchitis. I don't want sympathy, what I want is for someone to get very real with me.

My biggest thing is figuring out my meals. I am not very creative. I want a structured meal plan that is made up for me that I can follow. I know there are meals and food ideas on here but what my dream is that I could get someone to make my meal plans up for me. Does that sound crazy? I know this is long but I just had to let you know what my thoughts are.

Ask Umpa / Oven Baked Fajita

I am wanting to make this recipe for Superbowl Sunday. Please let me know what you think.

Oven Baked Fajita

1 lb boneless skinless chicken breast cut into strips
2 Tbls vegetable oil
2 tsp chili powder
1 1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp oregano
1/4 tsp salt
1 (15oz) can diced tomatoes with green chilies (rotel)
1 medium onion, sliced
1/2 red bell pepper cut into strips
1/2 green bell pepper cut into strips

Directions

Preheat oven to 400 degrees, place chicken strips in a greased 9 x 13 baking dish
Combine all seasonings and sprinkle over chicken and stir to coat
next add tomatoes, onion and peppers and stir to combine
bake uncovered for 20 - 25 minutes or until chicken is cooked through and the vegetables are done.

It has been 2 weeks since I started and I have lost 6 pounds. It hasn't been too bad. I also lost an inch and a half in my waist. I still need help tho. Today at work I got to craving chocolate, well, can you guess what I did? I got me a Hershey chocolate bar and a root beer (fully loaded, no diet)  >:(    :'(     Well, I got it out of my system and I'm back on board. Tomorrow is a new day.   ;D      Has anyone else ever do this and how did you do afterwards?  If anyone has any words of wisdom please send them my way. I am really determined to succeed at this and meet my goal.

Ask Umpa / Flatout flatbread

I found Flatout flatbread multi grain with flax at Kroger. They are 100 calories, high fiber (8g) carbs (17). Which makes them 9 carbs for one flatbread. My question is, if I cut them in half and use them as a wrap would that be ok? My thinking is if I cut it in half I would be getting 4 1/2 carbs.

I did half one this morning and put 2 pieces of turkey bacon, 1 egg, and 2 tbls shredded cheese (shredded from block).

Your thoughts everyone.  :)

Ask Umpa / Cabbage Casserole

My niece gave me this recipe. Would you tell me what you think? I just got thru baking this. My husband said it is good. So please let me know how carb friendly it is.

Cabbage Casserole

1 to 1 1/2 lb ground beef
1/2 cup chopped onion
1/2 cup green bell pepper
1 can 14 oz diced tomatoes (I bought delmonte - has 2 carbs per 1/2 cup serving)
1 tsp salt
1 tsp garlic powder
1 head of cabbage
3/4 cup shredded mild cheddar cheese

Directions:

Brown ground beef, onion, and bell pepper until ground beef is done, drain, stir in tomatoes, salt and garlic powder. Simmer uncovered 10 minutes, stirring frequently.

Boil cabbage wedges in small amount of water covered for about 10 minutes and drain well.

Lightly butter a 9" baking dish (I used a 8 1/2 x 11). Place cabbage in dish and pour beef mixture over and around cabbage . Bake in 350 degree oven for 20 - 25 minutes. Sprinkle cheese over cabbage casserole and bake for another 5 minutes or until cheese is melted.

Ask Umpa / Cauli Mash

I'm getting ready to make some cauli mash. This is the first time to make it. I don't have a food processor but I do have a blender. Does it make any difference? I know I won't get a response before I make it but would still like your input. I'm also going to try the fried chicken with pork rinds as my coating and some green beans. Sounds like a good meal, I just hope I like it.

I'm posting my meal for today. Can someone please let me know how I did? I am trying to understand how to do this. I think it's going to take me a while to really understand how to do it.

Breakfast
3 medium size pancakes (cream cheese, heavy whipping cream, 2 packets stevia, & 2 eggs)
2 slices bacon

lunch/snack
1 oz almonds, 1/2 oz bbq pork rinds, & 1 string cheese

Supper
1/2 cup cheesy broccoli
crunchy BLT (romaine lettuce, 2 thin slices tomato, 4 slices bacon, 1 tsp mayo, & 1 egg)

96 oz water and 16 oz unsweet tea

I don't have access to the ingredients for the peanut butter fudge that is on this forum. I found this one and wonder if you could tell me if it's ok.

peanut butter fudge

1 - 8 oz cream cheese, softened
1  cup smooth peanut better
1  cup butter
1/2 cup powdered artificial sweetener
1/2 tsp vanilla

In a microwave bowl heat the cream cheese, peanut butter, and butter until the butter is melted. Wisk the mixture well. Blend in the sweetener and vanilla. Pour the fudge mixture into an 8x8 dish. Cover and refrigerate until firm then cut into squares.

I purchased the cookbook and tried to download it twice. Said it would download that there was a problem with the content. Can you tell me what I need to do to get it? I was going to put it on my nook the second time but didn't have that option. So I was going to download it to my computer with no luck. Please let me know what I need to do. Can I get a refund if I can't get it downloaded?

Meal Plans / I need some input on my meal

I would like to have some input on my meals for today.

Breakfast 
      2 eggs    0 carbs
      2 slices of turkey bacon 0 carbs
      16 oz water

mid morning  snack
     1/2 oz bbq pork rinds    0 carbs
     1 mild cheddar string cheese  0 carbs
     drank 16 oz water

Lunch
      1 slice of American cheese   0 carbs
      1/4 cup pecans (that's the only kind of nuts I had)  2 carbs
      16 oz unstweet tea

Dinner
      1/2 roasted chicken seasoned with butter injection, mccormick meat tenderizer
                 and Luizanne Cajun seasoning. 0 (not including seasonings)
      1/2 cup boiled cabbage seasoned with 2 tbls butter, salt and pepper  1 1/2 carb
      16 oz unsweet tea

snack 1/2 cup strawberry jello  0 carb
          topped with redi whip  1 carb

My husband does most of the cooking so the amounts ingredients used on the chicken I have no idea how much.

I am new to this so if I calculated everything right I have figured 5 carbs for the whole day. This doesn't include the ingredients for the chicken. Please comment on if I have done this right or not and what I need to do. Thanks for your input.
