Here's 2 wonderful recipes to finis off that picnic table with potato salad replacements.


FAT TO SKINNY Low Carb potato salad, no potatoes required! Surprise!

Jicama Potato Salad( this was only 4 servings because i didnt know if we would like it,BUT WE LOVED IT)
1 1/2 cups Jicama
1/4 cup chopped onion
1/4 cup chopped celery
2 boiled eggs chopped
3 large tablespoons mayo
couple squirts of yellow mustard
salt and pepper to taste
CARB COUNT 11 1/2 ENTIRE RECIPE(2.87 PER SERVING)

Peel Jicama and cut into 1/2 inch cubes.Put in frying pan with 1/2 cup of water and cook until water burns out, now here is the trick, have a kettle or pot with boiling water in it to add keep adding it and cooking it out till jicama gets soft.Remove from heat ( or have a grown up do it beebs)Rinse with cold water and pat dry.Pour it in a bowl add rest of ingrediants to bowl and stir well.Refriderate.Then enjoy!



***For Cauliflower Potato Salad***6 SERVINGS

One Head cauliflower
1/2 cup chopped onions
1/2 cup  chopped celery
4 boiled eggs chopped
6 tablespoons mayo(or to taste)
3 squirts mustard(or to taste)
salt and pepper
CARB COUNT 16.5 ENTIRE RECIPE(2.75 CARBS PER SERVING)
Break up  one head of cauliflower into bitesize pieces Steam cauliflower for 9 minutes.Rinse with cold water.Pat dry.put in bowl.Add rest of ingrediants .***GENTLY*** mix well.Refridgerate. Enjoy!

Spoil me? Jicama is a mexican potato it is much less starchy than a regular potato.

Cathy try walmart for the jicama .By the way the I posted 2 potatoe salad recipes one with jicama and the other is made with cauliflower just in case you cant get jicama.

I'm going to have to try it with the Cauliflower  I'm in AK we don't get those taters..

I've made  mashed taters out of cauliflower before and liked it

You should have the cauliflower mash potatoe recipe in the book.I like to make twice baked potatoes with them, you know with bacon,cheddar ,onions and sour cream.Like you make potatoe skins with the potatoe skins.

You make the cauliflower like you do for cauliflower mashed potatoes.(Its in the book)Then spread the potatoes out in a baking dish and put green onions, crumbled cooked bacon, and cheddar cheese on top.Put in the oven until cheese is bubbly .Take out serve with sour cream.YUMMY!

It gives me that baked potato taste.You can make cauliflower mash potatoes like a baked potato, whatever your favorite topping are.

I LOVE Jicama.  I have eaten it raw for years but never cooked it.  I am anxious to try cooking it.  It's not that easy to find in NC however.

i live in North Carolina in the summers, we will actually be leaving Saturday to go up there when Doug gets back from the 700 club.i buy it at ingalls and walmart.We are in the Maggie valley,waynesville area.

Lucky people to be in the NC mountains.  We live in Raleigh area.  I can find Jicama sometimes but it is not optimal, usually not fresh.  Doug and I vacation in Hot Springs and hope to retire thereabouts someday!  And BTW, I will definitely be making the twice baked cauliflower, that sounds INCREDIBLE!!!

I have found good jicama at Whole Foods, it is not very convenient to where I live or work though.  I think I am going to try the Farmer's Market this weekend.

I'm experimenting and it's probably been done already but what the heck ;D. I took my crock pot cut up my jicama into potato salad pieces last night put it on low and let it go waiting for it to cool now. Still a little crunchy but not to bad.

Very interesting Phil, let me know how it works out I have never tried that before.If its not soft enough you can always put it in a skillet per my directions on recipe. ;)

Well, I brought it to work with me. I made it here gave it a try. It was a little crunchy. I think if I let it go longer it might do the trick. Jicama takes a while no matter how ya do it. I'm going to try BBQ next.

Jicama now at my regular Wal-Mart so no special trips to Whole Foods for that anymore!  Now if only they would get some xylitol and almond flour.....

If your walmart carries NOW brand vitamins in the pharmacy they can order the NOW Xylitol ;)

The Walmart in the next town over from here carries almond flour, but the one in my town does not. I found it at Ingles. I wonder if you ask your Walmart manager to order it if he can get it because some Walmarts do sell it. It should be in their warehouse and/or ordering system.

You got it owensmath.And if your ingalls carries Bobs red mill flours they can order any Bobs red mill products, or they will put you in touch with the vendor who stocks the store and he will stock it for you. ;)

I live in a little village called Redgranite, Wisconsin. Even though there is a Mexican store  here, they do not carry any jicamas. So I will use cauliflower. Thanks Umpa

Well I made the potato salad with the cauli and all I can say oh my goodness . If I had know that you could do all this with cauliflower I would have been thin a long time ago.
