Title: Carrot Cake From Fat to Skinny Bakery

Carrot Cake  
and cream cheese butter frosting  30  carbs entire recipe
INGREDIENTS
3/4    Cup xylitol
3/4    cup  peanut oil
3    eggs
2    cups un blanched almond flour
3   teaspoons ground cinnamon
2    teaspoon baking soda
2           teaspoons baking powder
2    teaspoon vanilla
1/2    teaspoon salt
3 cups zuchinni   shredded     ( 4medium)
One tablespoon orange food coloring
1/4    cup coarsely chopped walnuts
Cream Cheese Frosting do
1    package (8 oz) cream cheese, softened
1/4    cup butter  softened
     3 teaspoons heavy whipping cream
2    tablespoon vanilla
    3 tablespoons xylitol
      
      
Heat oven to 350°F.
Grease bottom and sides of one 13x9-inch pan or two 8-inch or 9-inch round pans with  non stick cooking spray
Shred zucchini. Lay out in paper towels or a dish towel and roll up and squeeze water out as you are rolling. Repeat this till all liquid is gone.
Put zucchini in bowl and add  orange food coloring
 In another mixing  bowl, beat xylitol, oil and eggs with electric mixer on low speed about 30 seconds Add , cinnamon, baking soda ,baking powder ,vanilla and the salt. Beat on low speed 1 minute.
Stir in flour, zucchini and walnuts
Pour into pans.
Bake 13x9-inch pan 40 to 45 minutes, round pans 30 to 35 minutes  or until toothpick inserted in center comes out clean.
Cool on wire rack for  10 minutes.
Remove from pans to cooling rack. Cool completely
In medium bowl  beat cream cheese and  butter.
Add whipping cream, xylitol and vanilla with electric mixer on low speed until smooth.
Frost and refrigerate for frosting to firm back up

Can I use Stevia instead of Xylitol? I have such a sensitivity to sugar alcohols.

You can get xylitol from  health food stores or online(amazon  is my choice). It is birch bark and 100 % natural.Great for your teeth!
I find if you are sensitive to it you are using too much.I use 1/3 cup xylitol for 1 cup sugar  for what is called for in sugars in recipes.
You can use Stevia  or sweetner of your choice.(If using splenda add the carbs) ;)

Will the liquid sweet and low or publix liquid sweetner slow/stall weight loss (http://www.fattoskinny.com/) ? It says that it has no carbs ,also do you use they Xylitol for your coffee or not ?

No I think your sweetner is ok always look at the ingredient list if you are concerned and the creamer you use.I like stevia in my coffee.I use xylitol for cooking and baking Jo ;)

 Thanks Umpa ! Barbers Heavy whipping cream in the purple and white container states that it has 0 carbs ,then in the ingredients it says heavy cream and skim milk so how is that possible to have 0 carbs ?

heavy cream is zero skim milk is not contact the manufacturer and tell them your son is a diabetic and ask that question.They will get back to you quick. ;)

Umpa, the "Carrot" Cake was delicious!!  Is it a typo or did you put 2 Tblsp. of vanilla in the icing?  I just put 2 tsp. and it was good.  I thought 2 Tblsp. would turn it brown.

We like a really vanilla vanilla flavor and when I asked Umpa she verified it is 2 tablespoons however it can be reduced if you wish.  ;)

My healthfood store carries it.Any healthfood store that carries NOW vitamin products can get it for you.Amazon too, its like $4.40 a bag there. ;)

In the Bakery Book I did carb counts based on the entire recipe.To me a cake is 12 -14 servings to you it might be 10.So the carb counts are for the entire recipe and you can make it as many servings as you like. ;)

Umpa this is wonderful!!  I made this tonight and couldn't wait for it to cool enough to have a piece...LOL    I think I know why my brownies weren't very sweet.  I realized that I am using the crystallized xylitol in stead of the powdered.... :o  That might make a difference.  I'll get it straight one of these days.  I just put it in the grinder and it worked just fine.  Thanks for a great recipe!!    Hubs might even like it.  ;D ;D

Ok so now I know it is a winner  ;D ;D  Hubs had a piece when he got home this morning and said that it was very good...Yea!!  Thanks again Umpa!!  You rock!!  I cut mine in 15 squares so that would make it 2 net carbs per piece.  :o  That is just to awesome! 

Might have to freeze the individual pieces so that I am not tempted to often ;) ..LOL  Does this freeze well?

The same recipe makes wonderful cup cakes too. Umpa has a mini cupcake pan so when she makes them portion control is very easy and delicious!  ;)

Yes I will try and make them cup cakes the next time.... that is a great idea.  I'm anxious to try other recipes now only I promised myself I would just do one a week...LOL  I need to break the habit of needing something sweet.  It's a work in progress for sure  :-\

Hi Margot! Its posted with the recipe.The whole cake is 30 carbs.I did all the recipes in The Fat to Skinny Bakery Book by total carbs for the whole recipe because your idea on a serving  of cake may be different than mine.So you divide the 30 carbs by number of servings.When baking low carb always follow the direction exactly.It  took me years of  failures to come up with good recipes. Umpa, I don't have any peanut oil in the house.  Is it possible to use canola instead? or is it that the peanut oil gives you the extra peanut taste?

Good morning Morgan, are you up early baking already?  I was ready the recipe for carrot cake yesterday and thought abput making it for my mothers birthday. but I thought I might ask her if she even likes carrot cake? haha!  carrot cake is MY favorite! anyways have a fun day baking and let us know how it turns out. I bought ingredients for cheese cake. so maybe it will be cheese cake for us! bye for now

umpa, my mother is coming here this Thursday from Texas. her birthday Sat. (74) I ask her what kind of cake she wants. and she wants carrot cake. so glad about that! so now I get to make it fts way. I was wondering about using stevia instead of xylitol? would it be the same amount? and I dont have the peanut oil. what do you think of coconut oil? I can buy the peanut oil. I also have canola oil on hand.

Hi Deb   I'm not sure about the stevia because I'm not experienced with using it especially with baking, so I'll just leave that to someone else.  However I do know that you could use any of the oils that you mentioned.  You are going to love this one...it is for sure one of my favorite recipes.  No one in my house could tell it wasn't made with carrots  ;D ;D

This is not a recipe Stevia will work on.The cake will be bitter. Canola would be great,TooSweet is correct about the oils being interchangeable. She makes beautiful wedding cakes. ;) Follow the directions exactly.The most important thing is making sure you press the moisture out of the zucchini or the cake will be wet.This is my grandsons favorite breakfast food at my house.

Thanks ladies,  I was going to do a trial run of these tonight in cupcakes. but it is soooo hot! I got my first order from netrition. it was so fast.. I think its worth the 4.95 ship :)ping to not fight the traffic and crowds. thanks again, ha ha i cant gets the smiley face deleted. silly tablet.
