Kim's LOW CARB REUBEN CASSEROLE YUMMMMMM!

LOW CARB REUBEN CASSEROLE
2 lb deli corned beef -  sliced thin
2 bags  sauerkraut
1/2 pound swiss cheese, slices
1/2 pint heavy whipping cream
2 large eggs

Mix together the 2 eggs, heavy whipping cream & sauerkraut.  In a 9x13 greased pan layer the chipped corned beef, sauerkraut mixture then top with swiss cheese.  Bake at 375 for about 30 mins or until hot & bubbly.  Can serve with a grainy or dijon mustard or a low carb Thousand Island Dressing ~ I like the dressing (I can post a dressing recipe if ya'll want ~ it's easy...) ~ NOTE:  this is really good scooped into a Joseph's Low Carb Pita but remember to add  2 carbs per 1/2 pita  Smiley

4 net carbs per serving if 8 servings ~ 5 net carbs if 6 servings ~

Hi, Jennifer! :)

While you're waiting for Doug's recipe, you can also try mine;

3 TBSP Whole Mayonnaise (like Best Foods or Hellman's) (0g)
2 TBSP Reduced Sugar Heinz Ketchup (2g)
1 TBSP sugar free sweet relish (0g) - I've tried several brands, and they're all good.

If you like your dressing chunkier, add more relish.
Or sweeter, add more ketchup.
Or thicker, add more mayo.

Ah! Great minds think alike!  :D :D :D :D

It is good stuff!... And it's versatile!

When in a pinch for time, I'll put it on cut up, nuked chicken breast, fish, pork, or turkey.
And when in the mood for more "kick", I'll also add Frank's RedHot Sauce (0g)... YUM! ;)

Yield: 1 cup of dressing

Ingredients:
•¼ cup mayonnaise
•¼ cup sour cream
•¼ cup sugar-free ketchup
•3 tablespoons sugar-free relish, such as Mt. Olive Brand
•1 tablespoon prepared mustard

Preparation:

Mix ingredients together and adjust to taste. Depending on the exact ingredients, you might want to add a little more ketchup or even some sweetener.
 
Nutritional Information: One tablespoon has half a gram of carbohydrate and 35 calories.
