I accidentally discovered something awesome!
While making my morning muffin, I used a little too much smart balance and added some sugar free maple syrup to see what would happen. The result was a very mushy muffin, which broke apart as I tried to turn it over in my mug (which I do to cool it down after microwaving). When I tasted it, I realized that it had a consistency similar to malt-o-meal, so I added a bit of heavy cream and mashed it well to make it even more gooey. Oh my gosh! It tasted so good, I had to share with ya'll!
Low Carb Maple Malt-o-Meal
1+ TBSP Smart Balance Light
(melt for 20 seconds in microwave)
Then add:
1 TSP Vanilla
2 TSP Sugar Free Maple Syrup (I use Maple Grove Farms butter flavored maple syrup)
3 drops Zero Sweetener
1/4 ground flax seeds
1/2 TSP Baking Powder
1/2 TSP Cinnamon
1 egg
optional - a small handful of fresh blueberries!
Microwave on High for 1 minute. Immediately stir with a spoon to break up the muffin. Add a splash of heavy cream and enjoy hot! (FYI - all quantities except egg, bkg powder and flax seed are approximations...I tend to eyeball it as I through it together)
