Post by: Doug Varrieur on February 19, 2012, 08:17:44 AM
Sweet ’n’ Creamy Tuna Pasta    12.5 net carbs for entire recipe
Servings- 3

Ingredients

   1 cup mayonnaise
   ¼ cup red wine vinegar
   2 teaspoons celery salt
   1 teaspoon stevia
   4 cans tuna or chicken, well drained
   6 hard-cooked eggs, peeled and chopped (6 net carbs)
   1 tablespoon chopped white onion (.5 net carb)
   3 packages Tofu Shirataki Spaghetti (6 net carbs)
   Cracked pepper

Directions

1.   Whisk together the mayonnaise, vinegar, celery salt, and stevia.
2.   Add the tuna or chicken, eggs, and onion to the dressing. Mix all ingredients well with a large spoon and set aside.
3.   Drain the noodles in a colander, rinse very well, and let drip dry.
4.   Dump the noodles onto the cutting board and roughly chop into approximately 1-inch pieces. Add the noodles to the tuna mixture and stir to incorporate well. Add cracked pepper to taste.

TIP- Not a tuna fan? Just substitute canned chicken for the tuna and enjoy. This recipe will feed 6 people and is great to take to a BBQ. Make ahead and let it set in the fridge overnight. The flavors are much better the next day.

Thanks Doug! :) :) :)

This will be a great BBQ recipe for this summer.
Plan to make it with tuna and with chicken to satisfy both palet types in the family.
