Title: Who wants French Fries! "Did he say French Fries"!!!!

Umpa and I love this recipe and have these quite often, as a matter of fact last night we had a fish fry and these french fries with our guests, they couldn't stop raving about them so I thought I'd share the recipe today.

2 cups of peanut oil or just enough to put 2 inches of oil in a skillet
1 large eggplant
1 1/2 cups ground pork rinds
1/2 cup of soy protein powder (0 carb)
3 eggs beaten
Salt and pepper to taste.
Sugar free ketchup.

Peel your eggplant and cut it into "Steak Fries" dredge well in beaten egg and set aside. Place the oil in your skillet (I use a 10" cast iron) and put on medium high heat. If not ground yet, grind your pork rinds to a powdery consistency and mix well with the soy protein powder. Dump the coating into a large plastic bag ( I use a tall kitchen garbage bag ) Drop the fries into the coating and shake well to coat. Fry the "French Fries" till golden brown, salt and pepper them to taste and serve with sugar free ketchup. Yum Yum!

chips mmm yummy...now i have to find out what an eggplant is...i know we have them , its just they are named something different...and its an aubergine ...xx ;D

I cant find any decent eggplant....sigh. Seems as tho the stores here only sell rotten ones.

Don't forget mushrooms , okra, turnips, and onions rings(measure before you cook) all taste good deep fried!

OH MY, I have not had supper yet, and these ideas are causing me to drool! Very good idea!
I made the Jicima last night and used olive oil for the oil. Would a different oil be better for the Jicima?

The eggplant is unbelievably good. I kept thinking I am doing something SO BAD when I was nibbling on it! I can't wait to take leftovers to work tomorrow....

The eggplant reminded me of fried green tomatoes...which is a VERY good THING! : )

Maybe I'll have these instead of the turnip fires....hummm decisions, decisions ;)
