Maple Sausage Egg Muffins
INGREDIENTS
Raw Breakfast Sausage
2 Whole Eggs
4 Egg Whites
2 teaspoons Rubbed Sage
4 packages of Stevia or splenda
1 teaspoon sugar free Maple Extract
1 teaspoon sugar free Vanilla Extract
12 one inch cubes Sharp Cheddar Cheese
Sea Salt
Cracked Pepper
Paprika
Pre heat oven to 400 degrees. Spray a 12 count muffin pan with non stick cooking spray. In a medium bowl whisk together 2 whole eggs, 4 egg whites, 2tsp rubbed sage, 2tsp Stevia Blend bake-able, 1tsp vanilla extract, 1tsp maple extract, some fresh cracked black pepper, a pinch of sea salt and set aside. Spoon out heaping tablespoons of raw breakfast sausage into the bottom of each muffin hole and press down to make a nice crust. Cut up cheese into twelve one inch cubes. Place a cube in the center of each muffin hole. Ladle the egg mixture equally into muffin holes and bake for 20 minutes. Dust with Paprika
TIP –This muffin browns slightly and has a nice bread-like consistency. The eggs aren’t as dense because of the higher egg white count. The sweetness and extracts make it taste like a maple syrup sausage egg and cheese biscuit. They freeze great too!

These are sooo good. We loved them. I took them to work and my co-workers were jealous. They made the whole office smell good when I heated them in the microwave.

What can you use instead of splenda or stevia? Will not using splenda change the carb count?

You know I need em! lol. No accidents yesterday of course I ate lunch at Bob Evans and left over kraut for the last two days. I may have to cook something soon though.... I got some turnips gonna throw them in the crock pot with green beans and some shank ham! Yum!

Beth Beebs is our resident type one diabetic that if she had to cook she would starve! :D She is cooking challenged! When I wrote the Bakery Book I wrote it so beebs and children could do the recipes! :D

If I don't have maple extract, can I just put in sugar free syrup (like for pancakes)?

I just made these. Delicious! Thanks umpa! It made twelve nice size muffins. I can't say they "look" pretty, but they taste terrific! I put alittle log cabin sugar-free syrup over the top of one before I ate it. Yum! You said to put two teapoons of sage. I can't even remember the last time I used this spice in anything. It seemed like alot to me especially since the egg mixture was "really" green after the first teaspoon, so I just left it at that. Also, you didn't say how long to bake them for so I wasn't sure. I think I left them in for 15 or maybe 20 minutes. Is this about right?

Yes until firm.Spices are an individual thing.Always start with less,you can always add more after you taste it ;)Do you have the Bakery book gpod97? You can get it free with 50 posts :)

What would be the carb count for either each of these or the whole 24??

Assuming you're using zero carb breakfast sausage the only carbs are in the eggs, 1 carb for each whole egg 1/2 for each egg white. the total carb count for this recipe is 4 ;) Welcome to the forum katiesmemaw I look forward to your posts 8)

welcome to the forum katiesmemaw! :) I am Umpa ,Dougs wife if I can help you please ask.I have a column on the homepage called ask umpa where I can convert your favorite foods to fat to skinny friendly.Normally when I do carb counts its for the entire recipe because everyones idea of a serving size is different.All the recipes in The Bakery Book are for the entire recipe.I get emails everyday with people asking me if its a typo!The recipes really are low. :)

Hey there to both of you. Thank you so much Doug and Sherri for you response on the count for these delicious sounding muffins. Doug, know you don't remember us but we are Carl and Betty. Carl got your book 2 or 3 years ago. We are full-time Motorhomers who are in this area for the summer months. I just downloaded this cookbook and I'm anxious to "get to bakin". Carl and I are in the Maggie Valley area. We usually spend the summer months in this area. A friend of mine here in Waynesville mentioned your first Fat to Skinny book and Carl went online and ordered it several years ago. We have never personally met but I look forward to that pleasure some day. Hope you are having a wonderful Labor Day!!

Can't wait to try this recipe. Sound very good..although i think i might leave out the sweetener since i don't have the maple extract and will most likely use the SF maple syrup.

That will work barbara! I use sugarfree maple syrup as a brown sugar replacement too.Exact same taste. ;)
