How do you store? I made the hashbrown casserole but have some peeled Jicama left.

I just wrap mine tightly in saran wrap and put it in the frig, it seems to do just fine.

ok, I have to ask...what in the halibut is jicama??? where can I find it?

It is a Mexican potato from what I understand (I am a newbie).  Even when cooked it is still crunchy (not as soft as regular potato) and sweet.  It is good, I will cook again.

Ahh...this should be interesting to find in the middle of cow country...do they keep well like potatoes? I may have to actually go to the ~gasp~ city to find them! lol  :D

I can't find jicama around here at all. :'(
I guess it has not caught on in the Northwest.

I'm in the NW, Tony and I can find it all over here.  :D Walmart carries them.

I'm in Western Washington state... It doesn't get much more Northwest than that!
In my experience, our Walmarts don't. :'( :'( :'(

There are lots of recipes on the forum.If you need tips to soften it look at my potato salad recipe ;)

Tony, I had been from Eugene, Or. and they had it at WINCO you might check there.  ;)
