Title: Chocolate No-Bake Cookies

I modified this recipe so it's REALLY good!

My mouth is so happy! These get even better as they cool.

Chocolate No-Bake Cookies

1 tablespoon butter
1 tablespoon heavy whipping cream
3 tablespoons xylitol or16 drops FTS zero
1 tablespoon unsweetened cocoa - 1 carb
2 tablespoons beanit butter
1/8 teaspoon vanilla
1/4 cup smashed pecans -1.2 carb
1/4 cup unsweetened coconut - 1 carb

1. In a saucepan over medium-high heat, melt butter.
 
2. Add the cream, cocoa, and sweetener to the melted butter and mix it well, bringing the mixture to a boil.
 
3. Let it boil for 1 minute, stirring constantly; remove from heat.
 
4. Stir in the beanit butter and vanilla, mix well.
 
5. Add nuts and coconut and stir until fully combined.
 
6. Drop by spoonfuls onto waxed paper, and let it cool.  The cookies will harden as they cool. I made 16 two-bite cookies. 3.2 carbs for the entire recipe.

I've been craving chocolate oat cookies for a long time. They got kind of hard by today so I'm thinking about putting 1/2 cup chopped pecans in next time instead of the fake oats. I'll let you know how that works.

I made your bacon wrapped cod recipe tonight for company and they raved. I used three kinds of dip - plain Ranch, chili and garlic Ranch, and cayenne Ranch. I think I was the only one who ate the cayenne. Yay! I have some leftover for whatever I cook tomorrow!

Sounds like your company eats great ;) Doug had a old friend come stay with us for a week.She was thrilled! She ate like crazy and lost 9 lbs :D

I've been getting rave calls today about last night's dinner. I gave them the last of the coconut cake for dessert. I was full, so I skipped it. Pat, pat, pat, pat, pat. Oh, my arm hurts from patting myself on the back! It was fun (dinner was fun, not patting myself on the back).

I made the Chocolate No-Bake Cookies using 1/2 cup pecans instead of the oat fiber stuff. My mouth thought I had died and gone to Heaven! I used a hammer to break the pecans into tiny pieces. I suppose a food processor would work as well, but wouldn't be as much fun! Anyway, dropped by teaspoonfuls to make 16 pieces, they're .25 carbs per piece. Delightful!

I'm really good at figuring out how to cook a meal with what's on hand.  Sometimes my husband is sure he's going to have to drive through for dinner and, voila, a full meal.  It's an art.

Andrea you are correct its art! I still can't get to the store so its gonna be a artsy day! :D Its stormy here and Doug is taking his truck to the walgreens for the Zero promo and my car is so old it leaks! :D :D

Good, Umpa! Let me know how they turn out! I was thinking macadamia nuts, but I think they're too high carb. 1/3 cup of xylitol was WAY too sweet, so maybe 16 drops of ZERO will be too sweet for you, too... taste as you go? ZERO has a different sweetness than xylitol so it's hard for me to compare. I love the sweetness of ZERO and tend to use more of it than I would of the xylitol.

Macadamias arent high Sarah ;) My nuts were bad,they got stale.I went to the grocery store and went to but a bag of pecans and for a 10 ounce bag it was $13! I can buy alot of pecans in georgia for that!So instead I made strawberry and ricotta tarts,coconut cream pie(Doug got his way  :D ) ,and a pork sirloin roast in the dutch oven with White wine and turnips.(recipe is in new cookbook)I also made a Schezuan steak and mushroom dish for lunch. Doug has spent the last 4 days doing taste tests at the Walgreen stores so i think I am getting bored!! :D :D

I hate it when food goes bad before I can use it! I've been keeping all the nuts in the freezer so they'll keep better. I have some Brazil nuts that would be interesting in this candy, too.

I made a batch using the 16 drops of zero and they're WONDERFUL! I also cut down on the boiling time - just let it boil until the cocoa was all mixed in. I have to really work not to eat all of them at once! Good thing they're very low carb!

Made them yesterday let them cool when I went to taste all gone. My kids and the hubby ate them all. And then they asked do we have any more. Hahaha you guys are so funny.

MommaB, that reminds me of when we fixed macaphoney and cheese for dinner with the nephew's family. Before the wife could get any, the kids had cleaned the dish slick!

1. Put the butter in a small bowl and microwave it for 30 seconds.
 
2. Add the sweetener, cream and cocoa to the melted butter and mix it well, then return it to the microwave for 15 seconds.
 
3. Stir in the beanit butter and vanilla, mix it until it's well combined and creamy.
 
4. Add the nuts and coconut and stir until fully combined.
 
5. Drop by spoonfuls onto waxed paper, and let it cool.  The cookies will harden as they cool. 3.2 carbs for the entire recipe.

I have an idea of dropping the cookies into mini-cupcake or candy cups, drizzling them with caramel and sprinkling them with a little more coconut to dress them up. Put in a pretty box, they would be a nice gift. I could give it to myself. :)

I did try putting a little Walden Farms caramel syrup on one and it was really tasty, but the syurp is too runny to treat the whole batch that way. Any ideas? I don't want to use Russell's caramels as they have malitol in them and I like the no-pain treats that these are now. Has anybody played with the caramel syrup to thicken it up, or have an alternative?

How about making these with peanuts and using some WF marshmallow dip for rocky roads? Or almonds and coconut just for the Joy of it? If we had a good crunchy cookie base, we could do some twicks.

I made this today with zero, I doubled the recipe and only got 14 cookies that were about a teaspoon each. wondering what size a 2 bite cookie is?  :P they were yummy. gonna store (hide) mine in the freezer. ;D

I keep all my cookies in the freezer so they are not in my face cause I will graze on them.Its a good idea to slice your cheesecakes and freeze them too so when you want a piece you just take it out. ;)

Umpa. I started with the same idea. out of sight out of mind! but found out early that sweets are almost as good frozen if not better. speaking of cheese cakes. I was looking at my recipe and it calls for half cream cheese and have mascrapone cheese. which is also 0 carbs. my crust has toasted almonds in it as well. sometime I would like you to help me alter to fts.

Deb, try adding more 0 carb beanit butter. It will increase the volume but won't change much else.

I made the recipe this afternoon - carb count a bit higher as I used Peanut Butter and only had walnuts.  Easy peasy it made 11 tspn size but became a bit bigger when I flattened them a out a bit.  Nice treat with my coffee  ;)

The unsweetened coconut that I can find is really dry.  I put the coconut in a bowl or plastic bag with a couple of tablespoons of water to get it softened up.  I like the end result without the crunchy coconut.

I agree with Umpa.  A treat the doesn't require that I turn on the oven is perfect for summer.

Thanks for all the Howdys! I've been fine - just busy. I'm going to try beanit butter/sf honey treats next. Put them in the freezer... I might put some nuts in them for crunch. I used to make them with regular peanut butter and honey. Crunchy peanut butter. I'll let you know how it works.

Hi Andrea! :)

Another way to moisten the coconut is to soak it in unsweetened almond milk with a few drops of coconut extract.
And if you nuke it for a few seconds, it will moisten faster. 8)

Add a few drops of FTS zero and you will have something close to the sweetened we are all used to  ;)

I toast my coconut to release the oils thats softens it up too. I like to sprinkle a little on top of my cakes for texture. ;) I do soften and sweeten it before I make my german chocolate cake. :)
