Title: No Grain Pizza Crust

I got this recipe off the web just now.  I was actually trying to make a pizza dough over the weekend with no luck, so just did a search today and here is what I came up with.  I'm going to try this recipe soon.  If you like, let me know what you think.  No grain/no sugar. 

No Grain Pizza Crust

1 1/2 cups finely ground almond flour (made with crispy almonds)*
2 eggs

3 TBL expeller pressed coconut oil, warmed so it is liquified
1/3 cup parmesan cheese
1/2 tsp organic oregano
1/2 tsp organic onion powder
1/2 tsp organic basil
2 cloves organic garlic, minced
1/4 tsp sea salt (RealSalt)

Beat eggs slightly with parmesan cheese and coconut oil.   Add herbs and flour and mix until well blended dough.
Form 2 small pizzas on a large pizza pan covered in parchment paper.   Place another piece of parchment paper on top so that the dough doesn’t stick to your hands and press out dough until you have 2 thin pizza crusts about 8″ across.     Bake at 425F for 10 minutes or until crusts are slightly browned on the edges.   The pizza crust does not expand while baking.

Remove from oven.   Cool slightly.   Add pizza sauce, toppings, and cheese and bake for another 10 minutes or until cheese well melted.

Just by a quick glance I would say it's about 8-9 carbs for this recipe, but when I run it through my cookbook program it gives me 6.5 net carbs.   ::)   Of course that depends on the ingredients you choose to use.  I like the now brand Un-blanched almond flour....it's the lowest carb count I can find.   :)

Hi Ereino, I'd also use the Now brand unblanched almond meal and I'd replace the 2 cloves of garlic with garlic powder.

I use the spinach bread recipe in The Fat to Skinny Bakery Book for my chicago style pizza ;)

Umpa, can you post the spinich bread receip?  Lent out book out and haven't received it back as of yet.  Thanks.
