Title: One Minute Muffin - OMG, Ya' Gotta Try!!
Post by: romarc on August 13, 2010, 05:23:57 PM
                 One-Minute Muffin

I’ll post the original “1-Minute Muffin” recipe I found, but definitely look at the many variations below...

.   Melt 1 T butter in a coffee cup or measuring cup.
.   Mix in ¼ cup flaxseed meal, (can use almond meal, oat fiber, coconut flour or a  mixture, i.e. half flax, half almond)
.   ½ tsp baking powder
.   1 egg
.   Sweetener (to personal taste): 1 tsp xylitol or 1-2 Spenda pkts or 1 T S/F flavored syrup (Torani/Da Vinci)

Mix well – microwave approximately 50-60 seconds (depending on micro wattage).  Turn out and let cool.  Muffin top should look shiny and a little moist. Serve w/butter or cream cheese while warm or plastic wrap for later.
---------------------------------------------------------------------------------------------

To get you started, here are a few ideas...

Banana Bread Muffin:  Add cinnamon/nutmeg, S/F Banana Syrup/extract, and nuts
Breakfast Muffin:  Add cinnamon, vanilla,
Spice Muffin:  Add cinnamon, allspice, and cloves
Cheese Muffin:  Add garlic powder and cheese of choice.
Chocolate-Raspberry Muffin:  add S/F Chocolate and Raspberry syrups, and a cream cheese cube in the center.

Chocolate Lava Muffin:  An individual Happy Birthday Cake (for the person looking for a recipe a while back!!)

1/4 Cup Almond Flour
1/2 tsp Baking Powder
1 Tbsp Splenda (more or less), (probably less if using Xylitol)
2 tsp. Torani Chocolate SF Syrup
1 Tbsp unsweetened Baking Cocoa (mine has 1 carb per Tbsp)
1 Egg
2 tsp. Butter or Olive Oil
2 pieces S/F Chocolate Candy on top of mixture.

Pumpkin Pie Muffin:  Add 1 tsp Pumpkin spice and ½ tsp cinnamon
Stuffing Muffin:  Replace sweetener & cinnamon with poultry seasoning & salt.

                                                  Now MORE ideas...
Nuke the mixture in a rectangular or square plastic container.  Cool and slice horizontally to make Sandwich Bread!!!  CAN YOU BELIEVE IT??!!  Now we can make grilled cheese; Reuben’s; egg salad; fried egg/bacon; BLTs, etc..  OR, dip slices in an egg/cream/cinnamon mixture and fry to make FRENCH TOAST, and top with S/F Maple Syrup!  Someone even made waffles with the original mixture!

Nuke in a round container (like the coffee mug), cool and slice horizontally.  Now we have a hamburger/sandwich bun; or the foundation for a McMuffin – I personally am looking forward to turning my faux English muffin into a Tuna Melt!!

More Tips/Ideas found on an old, Low-Carb board:

SANDWICH/BREAD/ROLLS:  “I make these, split the recipe between two square dishes and make 2 buns suitable for sandwiches, once sliced. For turkey sandwiches I add crushed red pepper, PARM, ITALIAN SEASONING, onion powder or garlic powder to the OMM (One Minute Muffin) recipe. I also add dill seed, celery seed, and coarse sea salt to the tops for all kinds of sandwiches.  This recipe is a lifesaver to anybody who misses bread.  I also use golden flax seed for a mellow yellow color.  Remember when you remove from dish, turn bread over to dry out the bottom if a little wet. I store mine in ziploc baggies.”

3-Minute LOAF:

“This is basically the "1-minute muffin" recipe, but tripled, made savory and cooked for 3-minutes.

3/4 Cup Flax meal
1 1/2 tsp. Baking Powder
2 tsp. Mrs. Dash, or Italian Blend Seasoning
3 Large Eggs
3 Tbsp. Olive Oil
Sprinkle of Parmesean on top

Mix the dry ingredients in a loaf dish (like the holiday-size, banana nut bread, etc.). Add eggs and oil, mixing very well. I notice that if the dry ingredients are not thoroughly mixed, or the wet-big pockets are left in the bread, so mix it up good! Sprinkle Parmesean Cheese on top. Microwave for about 3-minutes, my microwave takes 2:50 to complete.

Pop out of the baking dish. Slice the loaf in half. Then slice each half in half, making 4 slices total. Each slice should have 1.13 total net carbs, or each complete sandwich should have 2.25 total net carbs. Each slice is about 3/4 inch thick.  This is a keeper! Next time, I'll top it with some sunflower seeds, maybe some celery seeds or a very light sprinkling of oats.”

:D I’m am soooo excited about this recipe and its endless possibilities that I just had to share with everyone here on FTS!!! The 1-Minute Muffin is easy AND clean-up is just a cup and a fork!!!  ;D

Please be sure to post your creations so we all can try...

French Toast

¼ C flaxseed meal
½ tsp baking powder
1 egg
1 T butter
½ tsp xylitol
1 T Sugar Free Torani Carmel Syrup
½ tsp Pumpkin Pie Spice

Blend well (I mix in the Ninja or Magic Bullet, but you can mix by hand).  Spray coffee mug lightly with Pam, pour contents into mug – microwave 50 seconds or more until muffin looks done and moist on top.  Turn out and cool.  Slice into 3 slices.  Make egg dip consisting of 1 egg, heavy cream and nutmeg, mix well.  Dip muffin slices into egg/cream mixture and place in a preheated fry pan/skillet.  Brown both sides and serve with S/F maple syrup (I used Log Cabin – 0 carbs).  Total carbs = 1 (egg)

Just had 2 eggs, 2 bacon strips, 3 slices of flax french toast for breakfast with a total carb count of 3 1/2!!  Can't beat that!!
You can use make the 1-minute, 1-bowl muffins out of flax and soy - I just use flax to keep the carbs down.  You probably could add S/F maple syrup in place of the carmel.  I just found some 1 cup (I think) bowls by Ziploc that I make the muffins in, rather than the coffee mug - you can also just make them in cereal bowls...

I found a few of the Torani syrups at Walmart, but they seem to be running low, or maybe its because I buy so many and deplete their inventory  :D.  Netrition has a large variety of S/F Davinci flavored syrups (they don't carry Torani) - just ordered a  Banana (for banana/nut muffins), and Kahula for coffee (and White Russian  ;D ;D).

I just used this recipe to make a grilled turkey/bacon/cheese sandwich!

1 tsp butter, soft
1 egg
¼ cup flaxseed meal
½ tsp baking powder
½ tsp xylitol
1 tbsp heavy cream
A sprinkle of Parmesan
A couple pinches of salt

Mix ingredients together and pour into a square plastic container.  Microwave on high for 1 min 30 seconds.  Pop right out of the container, cool, and slice horizontally.  Lightly butter the outside of the bread pieces, add whatever meats/cheeses you want and grill it up!  YUMMMM!

The flaxseed definitely gives it a distinct taste, kinda like you are eating a very wheat-y wheat bread.  Salt & pepper definitely helped.  Next time I might add a dash of garlic salt or something.

Isn't it great to have muffins and sandwiches once in awhile??!!.

I agree the flax is a different taste, but you can mix flax with soy, almond, oat to tone it down some - I just use flax in my muffins (love the banana bread), french toast,  sandwhich bread to keep the carbs down.  I just remembered, I froze sliced coffee mug muffins and sausage patties to make McMuffins for breakfast... Actually, I don't really mind the taste - just ordered golden flax to see if that will have a different taste.

There are so many possibilites with these one-minute/one-bowl/one-carb muffins/bread...  I've made pepperoni bread for DH's meatloaf sandwich; olive bread for an egg salad sandwhich, an italian herb for a tuna melt,  plus the others listed above.  We also made the chocolate lava muffin, but used strawberries instead of candy - topped with reddi-whip and chocolate syrup - mmmm.  I have found the more moist ingredients or liquid I put in, I need to cook longer.  The coffee mug muffins are done in 55-58 seconds on my micro.

It doesn't seem to hinder our weight loss (http://www.fattoskinny.com/) a great deal as we are still slowly loosing - actually I lost 2 pounds overnite when I first started eating these - maybe due to the fiber in the flax and the potty-visits???  ;) ;)

From what I have read, make sure you drink plenty of water with flax...

It was delish!

I also tried making the bread with cinnamon, slicing it into 2 pieces, dipped in an egg/heavy cream wash and fried it up like french toast...with a little SF syrup it really filled me up, and for hardly any carbs.  I'll take a pic of that next time :)

Beebs, you can definitely do this.  I myself do not like any overly complicated recipes.

All you do is mix the ingredients (listed on previous post) into a batter.  Then pour the batter into a square plastic dish or container.  Any shape is fine, but then your bread will take on that shape.  You could do round for a burger bun.

Microwave for a minute and a half, and the batter magically rises into a nice spongey bread.  At this point it is one thick piece that should pop right out of the container.  Allow it to cool for a couple of minutes, then carefully slice it horizontally so you have two pieces of bread.

Put a light coating of butter on one side of each piece of bread, then build a sandwich (mine had cheese slices, turkey, and a piece of bacon) with the buttered sides on the outside.  Place the sandwich on a hot griddle, a few minutes on each side, until the cheese is melty and bread is a little crustier.

That's it!  Hope it helps! :)

My flax meal isn't golden and it works great too.  But I'm gonna pick up some golden to see if it has a more neutral taste.

I made myself a "hamburger bun" last night....very good. I have found that the recipe really doesn't need the Tbsp of butter. I have only been putting in about a tsp and don't even know if that is necessary. Added a sprinkle of onion powder instead of sweetener. The "muffins" are very satisfying and the flax really helps keep the intestines working ;)

I just tried these for the first time this morning.  They definitely will be added as a staple to our new way of eating.  I felt like I was in heaven eating something breadlike.  I did add a dash of salt, I think that improves the taste of nearly everything, not much, just a dash.  I fixed one for Doug like a pancake with Log Cabin sugar free syrup on top and he loved it.  And I can have a chocolate chip pancake again.  Gotta make umpa's chocolate chips first. Thanks for sharing this recipe ;D ;D ;D

I made it with the golden flax and made a grilled cheese sandwich.  It was surprising that something as simple as a grilled cheese sandwich could make me happy, but it seemed like a treat.  I found the bread quite filling and could only eat half of my sandwich.  I guess that's a good thing.  I never used to leave anything on my plate!

I made this as pancakes the other day and they were delish!!  Topped with SF syrup, what a treat...and no guilt!!  Beebs about your bread turning lumpy, maybe it's because your baking powder is not mixed in evenly.  I stir the baking powder into the flax meal with a fork and make sure there are no white clumps before I stir it into the butter and egg.  If the baking powder is evenly distributed it shouldn't be lumpy.  Then I just stir it altogether with a fork until smooth.  I don't get out the hand mixer for that.

1 Minute Muffin Batter as Pancakes
I just used the original recipe
Melt 1 T butter in a coffee cup or 1 cup Pyrex measuring cup.
.   Mix in ¼ cup  golden flaxseed meal
.   ½ tsp baking powder (stir this into the flax seed meal gently with a fork)
.   1 egg
.   Sweetener (to personal taste): 1 tsp xylitol
.   A splash of heavy cream
Give it all a really good stir with a fork to be sure it is mixed together smoothly.
Spoon in onto a hot griddle or frying pan sprayed with Pam (I had to spread it around with the spoon because it didn't pour).
When the top looked almost cooked I flipped it and cooked the other side.
They raised up nice and fluffy.
Serve with butter & SF syrup.

Made pancakes yesterday, Doug had a plain one and I had one with sugar free chocolate chips, sugar free Hershey syrup and redi whip topping.  I was a happy girl! ;D Doug said it tasted just like regular pancakes to him.  I put some Log Cabin sugar free syrup in the mix before cooking in a non stick pan on stove top.  Haven't tried making stuffing with it yet.  Was so busy doing other stuff yesterday.

I like the idea of using this recipe as stuffing.  I was thinking of making the muffin recipe with poultry seasoning, breaking it in pieces and setting it out to get a little stale or popping it in the oven for a little bit to get stale.  Then I was going to saute a little celery and onions in butter and toss with the stale "bread" pieces, wrap in tinfoil and put in the oven while I had something else in there, that way I didn't have to dirty another pot.

Since I am a newbie I am still trying to figure out the lingo. In the original recipe for one minute muffin it calls for 1 T of butter. Is that teaspoon or tablespoon?  Awesome how may variations there are of this!
Title: Re: One Minute Muffin - OMG, Ya' Gotta Try!!
Post by: paulachappell on September 26, 2010, 02:10:08 PM
Hey Jen, Capital T is usually Tablespoon in recipes and t is usually teaspoon.  I've been using 1 Tablespoon.  This makes awesome pancakes too and one will fill you up.  I add sugar free maple syrup to the mix to make it taste more pancake-y.  Doug loves them.  I put chocolate chips in mine  ;)
Title: Re: One Minute Muffin - OMG, Ya' Gotta Try!!

I have a small square(ish) tupperware-type dish (5 inch by 5 inch) that I use to make the "muffin", making it about the size of a slice of bread and 3/4 inch thick. When it is cool I slice it horizontally to make two slices of bread for a sandwich. Perfect!
Sometimes I add a couple drops of almond extract or a small pinch of onion powder (not onion salt) to add a different flavour and mask the strong egg taste.
Today I bought liquid egg whites so I'm going to try them, cuz I think the result will be a less eggy flavour.
And - I don't like to use artificial sweetener and the OMM was the only thing I was using it for. I had debated trying the recipe without but didn't want to spoil a muffin. However, this morning I just realized that yesterday I completely forgot to put the sweetener in, and never noticed. It tasted fine and was the same bread-type result. So now I will just eliminate the sweetener totally.
Also, when I get it all mixed in the little dish I let it set for about a minute before I put it in the microwave. This lets the flax absorb some of the moisture and swell a bit.

Well, the liquid egg white experiment wasn`t a huge success. The bread turned out flatter than usual, too flat to slice horizontally. The egg yolk must help it to rise. And I`ve been using huge eggs. I don`t know what my neighbour feeds his hens but they sure do produce big eggs.
Spaghetti tonight for my family, so I will use the muffin for myself instead of pasta, like a sloppy-joe.

1 T. Sugar Free Torani’s Caramel Syrup
½ t. baking powder
½ tsp. xylitol
¼ C. golden flax meal
¼ - ½ tsp Pumpkin Pie Spice
A few pecans/walnuts - optional

Mix all ingredients really well (I use Magic Bullet/Ninja but not necessary) except the nuts and pour into a microwave safe container.  Add nuts on top and mix in with a knife, fork or spoon – to get the nuts down in the mixture.  Usually I only have to nuke for 57 seconds on my microwave, but this was so moist, it took over 2 min – cook until the center is done and springs back.

I made “bite size” muffins for the guys working on our window – nuked them in small cups that used to hold lunch-size applesauce.  Put a caramel cream cheese topping on them made with Caramel Syrup and Temp Tee Whipped Cream Cheese (0 carbs) – mmmmm!  ;D ;D

CHOCOLATE-STRAWBERRY PANCAKES

Paula's post made me hungry for chocolate pancakes...  I made up a batch of the original OMM batter, used Golden Flax so I could see the strawberries,  added 1 T. Torani’s S/F Chocolate Syrup, 2 T. Hershey’s S/F Chocolate Syrup, and a few sliced strawberries - had to add some water to batter as we like our pancakes a little thinner.  These were really good “naked” :o :o, but DH got out the Reddi-Whip and Hershey’s syrup which made them heavenly.  Definitely having these again this week-end!!  ;D ;D

Wgat's the carb count on this?
Title: Re: One Minute Muffin - OMG, Ya' Gotta Try!!
Post by: romarc on October 02, 2010, 01:08:25 PM
My guesstimate is 2 1/2 carbs (pumpkin and egg), but if ya' "share" half it is almost as low as the original OMM (1g).  And it makes 4 cute little bite size munchies - you can have a treat for a little over 1/2 g.

I ♥ the OMM as pancakes, any flavor!  They are such comfort food, especially with a little crispy bacon on the side ;D

Well I tried this recipe as stuffing tonight and didn't like my results.  I made the batter out of 1/2 tsp butter, 1/4 cup golden flaxseed meal, 1/2 tsp baking powder and 1/2 tsp poultry seasoning (I made 4 of these).  I put the batter in a  4 sandwich size plastic containers and microwaved for 1.5 minutes each.  I then dumped them out on a cookie sheet and broke the "bread" into pieces and put in a 200 degree oven to get stale in a hurry.  I then sauteed onion, celery & red pepper in butter in a frying pan and tossed the bread pieces in it when they were dry enough.  I added more poultry seasoning, chopped fresh sage and parsley.  I transferred the bread mixture to a sheet of tinfoil, closed it up and cooked it in the oven with my chicken.  It was sooo dry.  It may have been better if I hadn't dried the bread cubes first, or maybe if I poured on some chicken broth, or not left it in the oven so long.  I think it would have been good if it hadn't been so dry.  So this was my failed experiment.  Let me know if anyone else tries something similar

When I make my OMM and I have tried it a few times it is soggy at the bottom . do I need to cook it longer or what > Paula when you say you use it as pancake do you mean the batter or do you do it in the microwave then cut it up like pancakes ?

Jo, I posted how I make the OMM pancakes on page 4 of this thread.  The only thing I do now differently is I add a splash of heavy cream.  You still have to spoon it out of the cup onto your frying pan.  They are sooo good!!

I made flaxseed pancakes and they were so yummy! And only one carb for the egg. ;) The great thing about flaxseed is you feel full all day.

Jo, maybe try adding an extra 10 seconds on to the microwave time.  When you dump it out of the cup, let it stand a few minutes to firm up a bit.  They are quite moist (I wouldn't call them soggy), but I like that they are not dry old muffins.  Just wrap you mind around the fact that they are just slightly different, but way healthier than any flour muffin you used to make.

So, the flax muffins are 0 carbs? What about almond? About 3 or 4?

Made one with almond -- it was great, but the calories are still a bit high. I'll have to try the flax next time, since that's about 100 calories less, if I remember right.

We don't get overly concerned with the calories, at least I don't, on FTS.

They are not 0.  Eggs, baking powder and cinnamon all have carbs.

I know it's tough, with the life-long programming we've been subjected to about calories and how they make you fat, to not count and/or consider calories.

Just remember... Net carb restriction =<20 per day along with portion control, will bring about weight loss (http://www.fattoskinny.com/).

We don't get overly concerned with the calories, at least I don't, on FTS.

I don't either, and maybe I should say 'portion control' rather than calories, since that seems to be taken the wrong way here. For ME, the fact is, if I eat too much of anything, even if I have 0 carbs, I won't lose weight (http://www.fattoskinny.com/). That's just how it works for both me and my husband. FTS is working for us, so I honestly believe it's a combination of the two.

BTW, I made the muffin mix as pancakes and those were awesome. I could eat those rather than have to pay for expensive low-carb pancake mix. Thanks for the suggestion and recipe.

That is exactly right and how F2S works for us all, Rena!  :)

Limiting carbs AND portion control are part of the F2S lifestyle.
Within reason, calories are not a consideration.

If we eat too many carbs, we will get fatter.
If we eat more than we need or when we're not hungry, we will get fatter.

Too much of anything (even something good) is not good for anyone.

I suggest that you reread Doug's book.
I have read it many times. And each time, something new jumps out at me.

There are many bread recipes on this book and in the Bakery book that can easily be made into muffins. I know you can do that and freeze them. I personally like the OMM because I'm the only one who eats them and they're super easy and quick to make -- not to mention you can do so much with them.

But definitely look around -- I know Izzet's bread is baked in the oven, as are most of the others.

Hi therevolvingdiet

Joagain has a great cornbread recipe that is pretty much the one minute muffin cooked in the oven you can find her post here: http://www.fattoskinny.net/index.php?topic=1302.msg11350#msg11350 (http://www.fattoskinny.net/index.php?topic=1302.msg11350#msg11350)

Also Izzet has a great bread for the oven and you can find it here: http://www.fattoskinny.net/index.php?topic=1341.30 (http://www.fattoskinny.net/index.php?topic=1341.30)

Other than that you can do a search from the home page or go to the section labled Breads and Crackers  Also there are Doug and Umpa's bakery books ;)

I've had a unpredictable microwave before  ;)  I hope this helps.....

By the way i have been making my OMM breads in the microwave in my silicone bakeware it works great! I was aliitle concerned about some of the plastic tupperware the girls were using so I tried it.Its pretty too.I have all kinds of different shapes like hearts and bears.I did a blueberry french toast in my bear bakeware it was so cute! I will have doug post the pics. :)

I've seen the silicone cookware, but never tried it.  I have read negative things about using plastic in the microwave.  I need to shop for silicone this week.

I also need some excercise dvds to be ready for the change in weather.  I actually got rained on 2 times at the track this week....though it felt GOOD.  However, when the temps drop, the rain won't be so nice.  ;)  Also, I have morning back pain from time to time.  I've heard that yoga & pilates can strengthen your core which helps with back pain.  I think it would be worth a try for me.

It has yoga and such...  If any of yall have used it before you know what I mean when I say the trainers are annoying!!! ::) ::)  LOL  They keep me honest though.... :-\   I like that I can go at my own pace and if I'm having a bad day and can't move much I don't feel bad about missing  ;)  It's lots of fun for sure and even the games are quite a work out..... I especially like that I can whip the hubs in the bowling  ;D ;D

I have heard good things about the Tai Chi though.  Umpa what made you chose the one you have?  Did you order it online?

Hi KFAITH! :)

My wife and I bought a Select-Number bed about 13 years ago. Back then, those beds were called Select-Comfort beds.
It's like a very sophisticated air mattress with plenty of even support for your entire body.
We can change the firmness anytime (and as often) as we like simply by using the remote control that comes with it.
The firmness of each side can be independently controlled.

Every time either of us has to spend the night elsewhere, we REALLY miss our bed.
We really love it!!!
We can change the firmness from almost table-hard to down pillow softness.

The next time you're on the market for a bed, check them out.
They are absolutely amazing!!! ;D ;D ;D

Yeah, I have an ice pack on my back here at the office today.  I am not sure what got it out of whack this time,  maybe it was sleeping on a different bed when we went to the beach.  I have looked at the memory foam toppers and wondered if they help.  Those sleep number beds sound VERY interesting too!!   I may just need to go for a visit to my chiropractor this week.   ;)

Tony we have had or select comfort for 15-16 years and it is as wonderful today as it was then . Jan you really need to get one they cost a little more then a regular mattress but you will not have to buy another one !!!!!

Tony I read somewhere that the our old select comforts air bag & foam inside could have developed mold on it . I checked mine out it had a small amount of black spots on it so I called them and they sent me 2 new air chambers and new foam for both sides  FREE OF CHARGE & I sent the old ones back  they even payed for the return shipment . You need to check yours !!

Hi Jo! :)

Every Fall after the Summer heat (and perspiration) has past, we pull our bed apart and apply a 50-50 water & bleach solution to the lower pad and air bags to deal with the mold.
This has been the only drawback in owning the bed. But we've been able to deal with it.

I did not know that they would replace them on request.
THANK YOU for this info!!! :) :) :) :) :)

Crawled out of bed and thought hot cereal and a pumpkin one-minute muffin would taste great this morning!

I had canned pumpkin in a plastic container than I needed to use up so I decided to make extra OMM to freeze.  I added all of the ingredients and was about to mix in the Ninja when I noticed a unusual smell…

Upon examination, I discovered I had added Castleberry Hot Dog Sauce instead of the pumpkin!!  Had a good chuckle and threw out – should have added chopped hot dogs to create a chili dog OMM!!!

Gotta love us some Tony!  :) Thank YOU!!
As I was cruising through looking for it yesterday I ran into a Banana bread post. Holy Hannah Umpa... that should be illegal! I made muffins using zero and pecan meal instead of stevia, almond, and flax. WOW. Thank you guys AGAIN for providing me with all the tools for success. Every time I find a recipe or idea that fits my "craving of the moment" I am inspired anew and so grateful! I love you guys! *grouphug*

1 T = teaspoon or tablespoon for syrup, butter or oil??

Banana Nut Muffin

1 T butter or oil
¼ c flaxseed
1 tsp xylitol
½ - 1 tsp banana extract
½ tsp cinnamon
Handful of chopped nuts
1 T Sugar Free Torani Carmel Syrup

Blend well (I mix in the Ninja or Magic Bullet, but you can mix by hand).  Spray coffee mug lightly with Pam, pour contents into mug – microwave 50 seconds or more until muffin looks done and moist on top.  Turn out and cool.  Serve with butter or cream cheese.  Carbs = 1 (the egg)

My son & his friend made spaghetti with meat sauce & garlic bread. I made  a OMM w/garlic & cheese & put the meat sauce over spaghetti squash. I think I had the best meal. :)

Certainly better for you   ;)  Great job!!  I  bet you felt better after too  :)

I love how with FTS I never get that bloated miserable feeling after a meal anymore...full maybe but not uncomfortable.

Hi, Umpa! :)

The "glue" taste comes from wheat starch.
I remember using starch as glue in grammar school many moons ago. :D

I really like the OMM. I've been making it 1-3 times a day, various shapes & flavors. I don't do soy,  so it's nice to find bread recipes without it. Thanks for all you do!!

I got one of those bread shaped sandwich holders, mix up a OMM  and put half in each side. Cook for 1 minute. One more dish to wash, & a little more putzy to get the batter all the way to the edges  & smooth it out, but it looks more like bread & I don't have to try to slice it horizontally. Really like those OMM!!! :D

My sister in-law whom is very healthy conscious and probably never had any fat on her loves it as well.  My mother shared it with her.  When I stopped in for coffee one morning she surprised me with one.    Great recipe to have and so easy!   :)

My friend at work understands what it means to have too much sugar in her system...she breaks out all over her face.  We haven't been able to eat bread in a long time until this one minute muffin recipe.  We make the muffins at work.  I actually turn it on its side to cook down and then, while still on its side, cut in into six slices.  We'll then toast and put butter on it and also some Canadian bacon or other meats.  It is so yummy and we are so happy now that we have a 'bread' that we can eat.  We have shared with other folks in our office and they like it too, not to mention how wonderful it smells after being toasted.

Thanks to everyone's contributions.

Sorry I haven't contributed lately - it's a dry time for me.  :-)
