I tried it for the first time this weekend...first time peeled & steamed which was good but I found it to be a bit bland...then I tried it peeled, sliced and drizzled w/EVOO & on the grill  in my grill basket...a bit more flavor that way. Any suggestions for your favorite way to prepare it  would be appreciated  :) Thank you

Lucky Day !  I just called around and got a great produce person who looked it up and will special order it for me this week...I still want to grow it myself  so wondering if we have a long enough growing season in the northeast for it to mature if I start rooting it within the next couple weeks ?...June,July,August and part of Sept. before we may get our first light frost YIKES !  Summers not even here yet and we're already laying in  5 cord of  wood  for next seasons heat and we just opened the pool a few weeks ago !!! Talk about  preparing for 2 seasons at once   :D  :D  :D  :D

I have yet to find chayote squash...Perhaps it's not popular in the northeast ?  How long a growing season does it need to mature ?  Just in case I find it and try to grow it here :-\

I just wanted to say Hi to Doug,Umpa and everyone !   And to say I'm still  here...My weight loss has been slow but I'm fine with that and I'm happy to say, it has been a gradual loss with no gains...I'm still limping from the Tibial plateau fracture but if it wasn't for Dougs book and the help/support i've received here I never would have had this success.  Not to mention learning soooooo much about food.  I was coming out of a store and someone I hadn't seen for a while said " I almost didn't recognize you, you've lost weight"   I thought to myself later..." It must have been my sunglasses or the fact that I've cut my hair short" But since the weight has come off so gradual for me I suppose I don't see myself as others see me . I still have a way to go but I know I will always keep Dougs book handy and be mindful of carbs for the rest of my life ;)

Lately I've developed some anxiety, feeling it more so as soon as I wake up...I was wondering if this might be associated with my low carb diet ?  I'm not one for taking suppliments or medications....I would appreciate all of your knowledge and advice on this please

Since I started back to work I haven't had as much time to come into the forum and I miss it !  Hello to everyone  ;D   I'm inching along slow & steady but am happy with how things are going considering I am still dealing with recouperating from the fractured Tibia and can't walk alot...I hope all is well with you Doug & Umpa and everyone !

I set the oven on 350...using a basting brush  dipped in oil, brush both sides liberally then I sprinkle with garlic and onion granular ( being partial to savory as opposed to sweet) then I cut them into 1/4-1/2 inch strips and lay on cookie sheet...bake for 10 min but I do watch them so they don't get too brown..I found if I don't bake them long enough they don't get real crisp and I do love the crispness...there are quite a few things you can sprinkle them with..different " Mrs. Dash " flavors  or a sweetener mixed with cinnamon...when cooled I store them in a zip lock bag ready for a crunchy snack attack :o
