Shrimp Skewers

Bar-B-Skewers

Made by Marder Brand – www.marderbrands.com
(found in the frozen seafood section at Publix)

12 skewers to a box – 5 frozen shrimp/skewer – 2 skewers = 1g

You can grill, bake, nuke or saute (if your pan is large enough).

I brushed with garlic oil and sprinkled on blackening seasoning and baked.  We each enjoyed 2 shrimp skewers, (1 g) 1 cup creamy coleslaw (1.5 g), and grilled zucchini strips (approx. 4 g) for a total of 6 ½ g for a light meal on a hot summer night...

Aly, I think I read on a post somewhere you are of Spanish decent? Try this recipe it's GREAT! For those of you who own the FTS cookbook it's on page 232.

Paella!

INGREDIENTS
1 skinless chicken breast
6 medium/large shrimp
6 large scallops
1 salmon filet
2 italian sausage links
5 slices red bell pepper
3 slices yellow onion
4 tablespoons butter
cauliflower rice (pictured below)
cajun seasoning
dill weed
italian seasoning
salt & pepper to taste
Cauliflower rice Prepare “rice” by processing a head of
cauliflower in a food processor with a chopping blade until
the cauliflower resembles rice.


Add three tablespoons of melted butter or Benacol spread.
Salt & pepper to taste, mix well.
Preheat oven to 400 degrees. Generously butter a 10”-12”
baking vessel. You can use any shallow casserole or baking
dish, my favorite is my #10 cast iron frying pan with a self
basting cover. Place all the “rice” in the bottom of the
baking dish. Place the sliced onion and sliced pepper on top
of the rice as if you were making a pizza. Slice the chicken
breast and sausage into ½ inch slices and using the same
format arrange on top. Cut the salmon into 2” squares and
arrange the salmon, shrimp and scallops throughout the dish.
Sprinkle melted butter, dill weed and Italian seasoning all
over the ingredients and salt and pepper to taste. Cover the
baking dish and bake for 45 minutes.

Thanks.. I actually went and bought shrimp, zucchini, mushroom and peppers to make some skewers tomorrow for dinner... I will get your recipe along with Doug's.. We love making turkey burgers and putting slaw on it...
