Title: Baked Beans

This is even better the second day, after the beans have had more time to absorb the flavors of the sauce.

Baked Beans

1 can black soy beans; rinsed, drained
2 strips bacon, diced
1/4 cup onion, chopped (optional)
1/2 cup green pepper, chopped
1/2 cup salsa or picante sauce
1/4 cup sugar free maple or pancake syrup
1/2 teaspoon garlic powder
1/2 teaspoon liquid smoke

Place the beans in a pan, cover with water, bring to a boil, reduce heat, cover and simmer until tender.  Rinse the beans and drain, set aside.

Sauté the bacon, onion and green pepper until the bacon is browned and the vegetables are tender.  Stir in the salsa, syrup, garlic powder and liquid smoke, then the beans.  Cook and stir over low heat until heated through.

This would be a great side dish at BBQs instead of the traditional high-carb versions.
