We are having some friends over for a cookout this Saturday and I told Doug I wanted to make your peanut butter pie for dessert! We think alike! I can't wait to try it! Love to show people how DELICIOUS low carb eating can be :)

Umpa what will happen if I forgot the lemon juice . I was making this to take to a cookout Monday ,will it be ok or am I gonna have to throw it out ?  >:( :(

Also if I have to make more can I use Blueberries . I have a bag of those in the freezer ;)

Check the carb count on the blueberries Jo, butt yes you can use them. I have never left out the lemon juice but you can try.Just remember to take it out about 10 minutes before you want to serve it. ;)

The Blueberries would be 19 carbs for 1 1/2 cup . How many servings do you usually get out of it ?

UBER i would guess about 51/2 -6 cups of ice cream. A serving size of  ice cream is  about  1/2 cup(umpas a cup) :D

Sooo simple!!!  Mine didn't taste too much like blackberries (probably lost a lot of its flavor coming all the way from Mexico  :D), so I crushed some fresh berries and put on top - yummy!

We have a special needs son who cannot have dairy (doc wants him on goat milk/yogurt), so I made him blueberry ice cream using goat milk instead of the heavy cream.  Goat milk isn't thick, so I added xanthum gum until it thickened up.  Tastes pretty good, and I saved a ton of money - a half gallon of goat milk ice cream is $28.00  :o  :o

For those of you who cannot tolerate dairy, maybe a low carb ice cream using almond milk instead of the cream might work for you...

I love almond milk for ice cream!The xantham gum will also keep it from icing up,thats what the ice cream manufacturers use. Romarc you need to post more of your recipes they are really inventive! :)
