Here is what I've been working on today  ;D ;D  I have to tell you I'm in love with this.  I've made this with full sugar before in years past and given it as gifts for family and friends.  So I just converted it over for a sugar free version.  

Low-Carb Sugar Free Pumpkin Butter

1 can (15 oz) Pumpkin Puree = 28 net carbs
2/3 cup sugar free maple syrup = 2.6 net carbs
¼ cup sugar free honey = 0 net carbs
1 Tbs lemon juice = .96 net carb
½ tsp cinnamon = .35 net carb
¼ tsp ground cloves = .14

Makes 2 cups (32.05 total net carbs)  with 32 (1 Tbs. servings) at  1 net carb per serving

Place all ingredients in a medium sauce pan and bring to a boil.  Reduce heat and simmer for 15 - 20 minutes or until thickened.  Be sure to watch closely so it doesn't scorch or burn.  Serve on a One Minute Muffin, low carb biscuit, low carb corn bread, toasted Izzet bread….etc.    Great idea for holiday treats if you are entertaining a crowd.  Make mini one minute muffins and top with pumpkin butter.  Yummy bit size treats.  Store in the refrigerator in an airtight container for several weeks or you could process in a water bath canner for longer storage.   If canned…. It will make a great homemade gift for family and friends.  


What you see in my picture is my breakfast this morning  :D :D  Just 2 1/2 carbs

STEPHANIE'S CHICKEN WRAPPED IN BACON

ingredients:

one poud of boneless chicken breast- (thin cut)  0 net carbs
12 sices of bacon   0 net carbs
2 - 8oz onion/chive cream cheese    2 net carbs for 2 tablespoons
butter

place the  chicken breast out on baking sheet. place 2 tablespoons of cream cheese in center along with a dab of butter and salt and pepper to taste.  roll the the chicken breast up bacon on the out side, and place toothpicks to hold together. bake at 400 degrees for 35-40 mints then broil for 5 mints to crisp the bacon.

i found this on pinterest and made it for dinner tonight with brocolli roasted with olive oil and minced garlic( 4 tablespoons = 4 net carbs)

TO SAY THE LEAST THERE WERE NO LEFT OVERS IN MY HOUSE!!! THIS IS A MUST MAKE!!!!

ABSOLUTE BEST HOLIDAY STUFFING

2 STEP PROCESS ~ 1ST YOU MAKE THE LOAF OF BREAD THEN YOU MAKE THE STUFFING (It's worth it!!!)

Bread
2 1/2 cups almond meal
3 eggs
1/3 cup water
1 Tablespoon  Baking Powder
1/2 teaspoon salt
1/2 cup butter (melted)
1/2 cup water
4 drops of Zero Sweetener
Garlic Powder
Onion Powder
Dried Parsley
Mix dry together & then mix in wet.  Pour into greased loaf pan and bake approximately 45 mins at 350.  Cool on counter and then crumble & spread out on cookie sheet.  Allow to dry out several hours to a day.  

Stuffing:
Bread Crumbs
1/2 cup finely chopped celery
1/2 cup finely chopped onion
Spices to taste:  (I like mine pretty savory)
     Garlic Powder
     Onion Powder
     Dried Parsley
     Salt
     Pepper
1/2 cup butter (melted)
Saute your onions & celery.  Mix everything together and bake in a casserole dish at 350 for about 30-40 mins.

Party Crackers

NOTE:  I actually make these for anytime but they are great for a party.  Sometimes I take some with me to eat with dips/spreads when going somewhere too.  After trying recipe after recipe of homemade crackers I saw my Lavash Bread sitting in the fridge (I use it for pizza & wraps) and thought I'd give it a go.  PERFECTION!!!!!!!  Great topped with sliced cheese, chicken salad, etc., dips, spreads.

Josephs Lavash Bread
Spray Olive Oil
Sea Salt
Seasonings ~ Whatever you like but I usually sprinkle on chives, parsley & garlic

Spray a cookie sheet.  Put the lavash bread on the sheet.  Spray the bread.  Sprinkle with the salt & seasonings and spray again.  Using a pizza cutter cut the bread into the size crackers you want (large ones are excelent for sandwiches  :) )  Bake at 350 until the bread gets brown.  Watch it carefully.  It doesn't take very long and the bread can go from brown to burnt quickly!!!!!  Ask me how I know! 

This makes an extremely crispy cracker and stays good for awhile in a ziplock bag.  Net carbs for entire recipe is 8.  1/4 of the crackers would be 2 net carbs.

One question though... If the lavash bread crackers get very crispy, wouldn't they crumble if used for sandwiches?

But used as crackers with dips, cheeses, deli sliced meats, etc., I'll bet they're yummy! :)

Ricotta Pie
 1 lb ricotta 28 carbs
 3 eggs 3 carbs or zero carbs depending on your brand
 36 drops of Zero or to taste,depending on how sweet you want it
 1/2 tsp cinn 1 carb
 1 tsp real vanilla  extract .53 carb
 1 tsp orange peel .50 carb
Beat until smooth,pour into 9 inch pie plate
Bake at 350 degrees 50 minutes or until firm

 Total 30 or 33 carbs for the whole pie
Per slice carbs depend on how many slices you get

Tony - they are very crunchy.  The sandwiches are more like big deli meat and cheese between crackers but I like the crunch.  Plus I put mayo on both crackers which holds it together.  YUM!  I also love the crackers with peanut butter.

SAUSAGE BALLS

A Roll of Bulk Sausage
2 cups of shredded extra sharp cheddar cheese
Sprinkle in some garlic and onion powder
Mix all together.  Roll into balls.  Bake on cookie sheet 15-20 minutes or til cooked through at 350.
No binder needed - they are yummy!

Spice pumpkin bars


his very easy and quick recipe not sure where I found it wish I could take the credit . I can only take the credit for posting it here for you 

1 cup almond flour
3/4-1cup of xylitol
1tsp cinnamon
1/2tsp ground cloves
1tsp baking powder
1/2 tsp salt
1 15 oz can of pumpkin ( not pie filling )
3 eggs
1/4 cup oil
2Tbsp water

Preheat oven to 350
Mix all dry ingredients in a bowl in another bowl mix wet ingredients with the pumpkin.
Mix all together (taste batter for sweetness)
Spray 9x11 pan and pour batter in cook for 25 -  30 minuites done when toothpick comes out clean
Icing
8 oz. cream cheese softened
1 tspvanilla
3/4- 1 cup xylitol
Little cinnamon
Mix together when cake is cool spread the icing and enjoy
I got 18 small squares at 2.5 a piece
Check your carbs in your pumpkin and almond flour ( if you use now it will be less carbs)
Too sweet told me to enter ( I think I am too late  ;D)

I can say these are really good.... I stretched the batter out thin on a cookie sheet and made them into a pumpkin roll.  I put them in the freezer just long enough to firm up a little and sliced them thin like a little cookie.  Oh man  :o :o  Soooo good   Everyone liked them Jo  ;)
