Title: non-corn bread with a bite
Post by: owensmath on August 11, 2010, 07:26:54 PM
I wanted a little something full of flavor and I played in the kitchen and made something soooooooooooooo yummy!
It has spice, bread texture, crunchy/browned texture, yummy all over it!
I'm not 100% certain of the amounts, so sorry....

Start with the basic bread mix dry ingredients for Umpa's spinach bread (almond flour, a little soy flour, salt, baking powder, garlic powder, cayenne pepper, oregano, and about 1/4 cup of shredded mexican seasoned cheese). Then, in a separate bowl, mix two eggs with about 1/4 cup of heavy cream. On the stove top, saute some chopped onions and fresh green pepper in butter. Pour the eggs mixture and the veggie mixture into the dry ingredients. Stir well until it's all mixed together like batter.
Spray a 9 x 13 rectangular cake pan with non-stick spray. Pour the mixture into the pan. Bake at 350 for about 25 minutes. Turn the oven to broil to brown the top.
Serve warm with butter....OMG!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
