Title: Anyone up for a low-carb-a-thon?

I am interested in seeing how close to zero I can keep my carbs for a few days. Anyone else up for this challenge? We can post our food journals here and then discuss results, too...

I'm not hungry until 10am so I don't eat until then.  Then I will eat

1 hard boiled egg - (0.6 carbs)

coffee w/1 T cream
1 egg - (.6 carb)
1 tablespoon cheese
1 slice Canadian bacon (.3 carb)
1/2 x 1/2 inch pepper and mushroom (.1 carb)

Brunch = 1 carb

Supper at the neighbors'
tacos
  ground beef
  cheese
  1 tablespoon tomatoes (.5 carbs)
  1/2 cup lettuce (.5 carbs)
  1 teaspoon sour cream
  1/4 avocado (.5 carbs)
  2 olives
Supper 1.5 carbs

2.5 carbs for the day

Thanks for the idea.  I'm yearning to break this plateau and this will probably do it for me.  It's so much easier with a group.  I'm even going to grate my own cheese to avoid the potato starch carbs on the easy stuff.

Yeah, the cause is losing some of my fat! Actually if we need a cause, we could donate $ per pound lost this week to getting FTS books into schools.

I hope you girls got your beginning weight this morning...

Wow....just saw this!  I was thinking of trying to stick to 12 carbs a day for a while, but not sure I could do zero!  YOU girls ROCK!!!!   Can't wait to hear the results.  Keep us all posted.   :)

I've been thinking about going super low for a while, so this is a great fit. It's amazing how much food you can eat for just a few carbs! I'm trying to be creative - last time I went super low, I lost 5 pounds, but ate really plain food. This time I'm looking for 0 carb additions. And drinking LOTS of water.

There's this guy who is a type 2 diabetic who runs a blog called "Diabetes Warrior". He does tests and experiments on himself and he recently tried a basically "zero carb" experiment. I don't know what happened with his weight loss (http://www.fattoskinny.com/) but I do know that it put his fasting glucose in the 70's with no need for insulin. He thinks the ADA high carb recommendations for diabetics are an atrocity (as do I) and recently his home state dietetic association threatened him with legal action because they claimed he was "giving out dietary advice without a license". 

For us, its about losing weight. For him, its about getting his life back. Either way, he would do just fine with FTS recommendations for diet for the rest of his life, as would about half of the U.S. population.

I did read in another blog by a doctor that humans were built to eat low carb. I read somewhere else (sorry, can't remember sources!) that hunter gatherers ate absolutely no more than 80 TOTAL CARBS per day, and that was in summer when fruit was available!  In winter, their carbs went down to almost zero!!!!  :o Remember, these are the same ancestors who had ZERO issues with diabetes, blood pressure, dental carries, heart attacks, and anything else we suffer from today. Hmmm..... caveman was on to something here.

My doctor said that the medical and research based data that the author of the book he recommended for me to read is totally supported by what he learned in medical school. He went back to his resources and looked it up because he wasn't in agreement at first. He is really supportive of the low carb lifestyle now. It is such a turn around, it is amazing!


Oh, and I lost 1.4 pounds yesterday. I am now below my lowest point so far. I find that my weight is often like a small bungee cord. It teases me by dropping to a certain point and then it bounces up a couple pounds and then continues to bounce up and down within that range for a while.  Today, I have finally dropped below the bottom of latest range!

I am finally in "ONEderland" and haven't been here in about 20 years!!!!!

There are a lot of recovering diabetics on here Waterlilly myself included   :)  This is exactly how I think of FTS  It has given my life back to me  ;)  I feel like for the first time in a long time I am in the driver seat again   ;D

You could still do it with us, Elizabeth. It doesn't have to be 0 carbs - you can just eat low, low. Also, berries freeze. It's not too good to freeze lettuce, though. We're going to be the winners - or, uh, losers - no matter if we eat a couple carbs or 0 carbs.

I am pretty tired of the plateau I've been sitting on for a while too. I fluctuate around 4 pounds from my lowest all the time.  What's silly is that I KNOW why I am not losing..... my portions have been too big, and I have been eating too many nuts.    On the bright side....at least I know how to maintain!  ha ha   :D

Grocery shopping later today.....re-thinking the super low carb idea.  You girls inspire me!!!  ;)

You sound just like me Jan!!  LOL  I'm glad I'm not the only one  ;D ;D  Those portions just seem to sneek up when you aren't looking... I have to remind myself to always measure don't guess  HA!!    Thinking about joining in the low/no- carb-a-thon  just to see what happens

Owensmath, when I looked up celery, it said there are as many grams of fiber as carbs, so I counted it as 0... Was I wrong?

Sarah,
Both those numbers for celery, 0.6 and 1.4, round to 1.  That's why labels can be so misleading, too.

I lost .4 lbs staying at about 12 carbs per day.  My issue is getting enough fiber at a very low number.

I just think it's funny that the same website gives different numbers for the same item, looks like izzet was logged in and I wasn't. also the one I looked at said 1 gram fiber which nets out to 0 grams carbs. It's no wonder we get confused about what we're eating!

I haven't lost an ounce so far on the low-carb-a-thon. I'm going to increase my water and see if that helps.

My issue is getting enough fiber at a very low number.

My doctor told me to take fiber con instead of eating a salad every day....lower carbs for the day.

I drink lots of water, all the time. I constantly have a water bottle or large cup with me and go through at the very least a gallon a day.

Am I the only one still doing this?

From last Wednesday to today, I am down 4 pounds!

I'm still doing it, but haven't lost an ounce, but I haven't been as low carb as I wanted and yesterday I was having a 'taco' salad at a restaurant and suddenly tasted a bean so I don't know what I did to myself. I forgot to post my meals for a couple days. I can try to catch up - or are we done?

Usually my day would be around 16-20 net carbs.  I tend to have a snack of almonds at work and could probably do without, just habit!  I am tracking and increasing my water.

Well, today marks one week from the start of our low-carb-a-thon!
Prior to this event, I had been losing less than a pound a week.

This week, I have lost 2.6 pounds and I am thrilled because I am now at my lowest point so far in about 20 years.

1 wedge Laughing Cow cinnamon cream cheese (2)
Total for breakfast - 4.6 carbs

Well, my 16 year old son made my day yesterday! I was trying on the clothes I had been given from my friend (readyforthis on the forum) about a year ago and some of them fit now! She gave them to me about 8 months ago and I threw them on the shelf near the top of my closet. My son saw me as I was looking to see how a few of the outfits looked in the mirror and he said, "Wow, mom, you've really lost a lot of weight lately!" Wooooooooo hooooooooooo............... inches have been coming off again! How  nice!

So, with that in mind, I will continue the low-carb-a-thon because it has kept me from hitting a plateau lately.

Donna, that is so cool!  I'm not being quite as strict as you are but the low-carb-a-thon has refocused me on counting and I'm down another pound this week.  It broke a 4 week plateau.

Andrea, that is awesome that you broke through the plateau! Those can be so frustrating.
I guessi need to stop posting my stuff here, but I will still be paying extra careful attention to my carbs and will try to keep them as low as possible. It looks like I am one of those people who must keep them considerably below the 20 mark.

Why stop?  I think this is a good demonstration for everyone.  We all hit plateaus and I think they are important, giving our bodies time to adjust, but they are frustrating and you are giving folks a tool to use to break through them.

I have to add a snack to my daily menu.

I used the cream cheese danish recipe that was posted recently, but I modified it.

I didn't have the flavor of Torani SF syrup mentioned, so I used French vanilla instead. I added a touch of sour cream, I doubled the recipe, and then I baked it in individual sized pie pans. I made 3 servings, so the carbs would be 3 (for the original recipe)  plus 2 for the sour cream times 2 (doubled the recipe), then split it into 3 servings, so 10 divided by 3 is 3.3 carbs per serving.

Therefore, my carb count for the day is now 6.75 + 3.3 = 10.05

When you eat cheese or prepared meats such as summer sausage or anything you can buy prepackaged (Ekrich roast beef or ham or whatever) do you count the carbs in those? I've noticed there is always either "less than one" or "one or two" for the carb counts. Of course, I NEVER eat anything honey glazed. I've just noticed that even cheese has some carbs.

So if you eat meat and veggies, are you just counting the veggies?

Thanks Andrea!  I am so excited!  Hopefully I can keep this up.  Instead of snacking on roasted peanuts and eating too much whipped cream,  I have started making icy shakes in the blender.  There's some great recipes on the forum!  Strawberry is my favorite!

Waterlilly, I know that shredded cheese has more carbs than block cheese because they add corn starch (or something) to keep it from sticking together.  Back when I used the little packs of splenda, it said "less than one gram".  I counted those as 1.  I am definitely no expert, but trying to do better!  I have found this week that it pays to count EVERYTHING!    ;)

 Hi Waterlilly you need to count all of your net carbs.   ;)   I try to find the ones that have the lowest or list 0 if I can.  They will add up quick if you aren't careful

If a label says <1 for carbs, I count it as 1. BUT......you have to watch what they say is a serving size, too. Sometimes, it is a very tiny amount that counts as a serving, and that is why they are able to mark it as <1. It is better to round UP than down, because it is in our best interest to keep the carbs accurate.

This morning at church, we had Muffins for Moms, and MommaB was in charge of it. Guess what she did? She is so awesome! She had made Doug and Umpa's Maple Sausage Egg Muffins for her and for me! They were amazingly delicious and she had it warmed up for me when I walked in the door so I could still have time to rehearse with our Praise Band. Also, another friend at church told me that she had ordered the FTS book after seeing the 700 Club segment I posted on my FB page last week. How cool!!!! After church, another friend mentioned to me that she was "sort of" doing FTS because she had switched to brown rice instead of white rice and wheat bread instead of white bread. Her husband is familiar with FTS and he kind of stepped back and waited for my response. I explained to her that she was moving in a good direction by thinking about what would be better for her and her kids to eat, but that it was NOT FTS at all. I explained about the rice (both kinds) turning quickly to sugar after entering our blood stream. She said, "Well, I just love my bread and potatoes too much to give them up!" I said, "I used to love them, too, until I found out that my love for them gave me a disease that I will always have to deal with. They don't tempt me anymore!"  I will list my foods for today in another post since this one is kind of long already..... I talk too much, too.... : )

It's never too late, MommaB! I haven't been posting my meals like I should, but I'm still in the thon and eating low. Not as low as possible, but low. For instance, I had a no-carrot carrot cupcake today. I made 12 cupcakes from 1/3 of the recipe, so they're pretty low in carbs, but not necessarily vital eats. I thought they were though, so had one for breakfast.

I'm still struggling with this. It's getting better but I still need to cut down on the amount of food I eat. I don't feel like I need that much because I'm always full (nourished too? could that be why?)

I'm contributing to the survival of the planet because I'm consuming much less. Still playing with the amounts though.

Donna, how are the books being received in the classroom?

This has been great! I look forward to implementing them with my curriculum next year, too! It really opened up some great discussions after they were able to pick their jaws up off the ground. They had no clue how much sugar they were getting in seemingly healthy foods and drinks.

One of my coworkers borrowed a book about two weeks ago. Today, he said, "Do you notice anything different abut me?". He has been trying to implement the basics of FTS and he is already noticing positive changes in how his clothes fit and how he feels overall.

I just LOVE this aspect about eating under 20 NC/day. I can go a reeeeaaalllly long time (compared to when I was eating carbs) before I need to eat again.  It's very liberating and I don't feel like I am chained to food anymore or like I HAVE to be near a snack at some point during the day. Stable blood sugars are magical.

I know, Umpa! It amazes me how little I'm eating right now and I really don't feel hungry!!! I must admit that I was hungry at the beginning of this low carb athon...but after that first day, it's been all good!!

Can't wait to see how all of this translates on the scale in the next few weeks! May keep eating this way (as low as possible on the carbs) until I reach my goal weight!! It certainly saves money on food!!! lol   ::)

Coffee the usual way (I waited and waited to feel hungry and didn't until lunch time, so coffee was it for breakfast today!)

Grilled cheddar on OMM flax bread (.6 carb) Could only eat 3/4 of it and gave the rest to my 8 year-old who was thrilled!!!
a few cheddar pork rinds (0 carbs)
almond milk (0 carbs)

Dinner
Doug's shepherd's pie (Made by my 12 year-old!) (5 carbs)

better than yogurt (.5 carb)

Those Nutrition snacks are pretty awesome.

B: 3 slices bacon + OMM + pat of butter + coffee w/ 1 tbsp coconut oil = 2 carbs

L: 2 double cheeseburgers (no bun, no catsup) 8 carbs (UNsweet tea with lemon = 0 carbs)

D: Stir fried garlic green beans in peanut oil (divided into 4ths = 3 carbs/serving) + 1 hamburger (1)

Total for day: 14 carbs

This gets easier as I go

I also counted calories for this and I was around 1500 and FULL!!! That's a first for me.

I'm slow but eventually, I catch on.

I'm also starting to see why you guys sometimes skip meals or why Doug only eats twice a day.  To be completely honest, based on my menu yesterday, I think I ate WAAAYYY too much, esp since I'm a 5' 5" female.

I remember eating less on high carb and feeling hungry. I have no idea why I went the other way but I think I will try to keep my total calories to around 400 per meal and carbs @ 20 or less. This way of eating makes me REALLLLLYYYY full. Like Doug said, you don't need NEARLY as much food as you think you do. I'm starting to get that. Slowly...

I don't care for the powdered fiber supplements.
So I take 3 Metamucil capsules, twice a day.

Costco sells 300 capsule bottles for about $20.

Although I eat my greens and get quite a bit of fiber from GGs and such,
supplementation insures no traffic jams... And so far, so good! ;D

Andrea, I usually have flax meal in something, but usually every-other-day! The cornbread that you see on my menus is made from flax meal, so is the bread and the pancake!! I do get in as much as I can so I don't have what Tony calls a traffic jam!! (I like that, btw!!)

You can look back at our previous posts here to see what we ate.  I sometimes ate pepperoni sticks (or slices) and pepper jack cheese sticks! I don't always eat typical breakfast foods in the morning. It is so much more fun and there are so many more options that way.

Breakfast: Smoothie  that consisted of 2 cups of raw spinach, 1 teaspoon bee pollen, green tea, and three drops of Zero.
                Six slices of bacon.
                16 oz of water.

Snack:     Sugar free jello
               16 oz water
                  *0 Carbs

Lunch:     Chicken Breast with key lime mustard.
               Handfull of pork rinds
               Tea with 4 drops Zero
                  *.5 Carbs

Dinner:   Hamburger with cheese and one stip of bacon.
              Tea with 4 drops zero.
                   *.2 Carbs

Snack:    Almond Milk sweetened with zero blended with ice.
                   *0 Carbs

Total: 5.7 Carbs. I think my figures are correct.  ;D

Tried making your Umpa Mc'biscuits this morning! I need to make them a little less flat & and little bigger around, but they tasted good with sausage & egg-white scrambled eggs on top!!! Yummy!!!  :D
