Here is what I found online about celery.

Well, isn't that something! I went here and it said 1 gram carbs and 1 gram fiber in a 7 1/2 to 8 inch stalk!

Right from the FTS carb counter book,

1/2 cup raw-  Celery   0.8g net   ¼ tsp sugar

Breakfast -
4 slices bacon (0)
1 pepperoni stick (0)
1 pepper jack cheese stick (0)
lots of water
Total for breakfast: 0

Lunch -
shrimp salad: shrimp (0), mayo (0), celery (0.6), dill pickle (1), salt, pepper, celery seed
3 cups fresh raw spinach (1)  http://www.walmart.com/ip/Marketside-Fresh-Spinach-10-Oz/13893738
Total for lunch - 2.6
Total for the day - 2.6 carbs

Dinner -  Decided to mix up the chicken and spinach into a little casserole.
Crockpot chicken - 0
2 cups fresh spinach cooked - (.67)
2 T mayo (0)
4 T sour cream (2)
shredded cheese (0)
Total for dinner - 2.67
Total for the day - 5.27 carbs

Sarah,
Both those numbers for celery, 0.6 and 1.4, round to 1.  That's why labels can be so misleading, too.

I lost .4 lbs staying at about 12 carbs per day.  My issue is getting enough fiber at a very low number.

I just think it's funny that the same website gives different numbers for the same item, looks like izzet was logged in and I wasn't. also the one I looked at said 1 gram fiber which nets out to 0 grams carbs. It's no wonder we get confused about what we're eating!

I haven't lost an ounce so far on the low-carb-a-thon. I'm going to increase my water and see if that helps.

My issue is getting enough fiber at a very low number.

My doctor told me to take fiber con instead of eating a salad every day....lower carbs for the day.

a handful of BBQ flavor pork rinds (0)

I drink lots of water, all the time. I constantly have a water bottle or large cup with me and go through at the very least a gallon a day.

You might be the only one but I'm planning to take it on this weekend.  For me, it's a matter of planning and time.  Now that I write that down, it seems like an excuse.
