Kim's Mexican Jalapeno Casserole

I wish I had made this while the contest was going on because it's sooooo good!!

How many cups can I eat that? 1 cup?  I live alone and would like to invite someone to join me.

Kim's Mexican Jalapeno Casserole
2 pounds ground beef, extra lean
2 cups chopped jalapeno peppers ~ seeded
1 cup chopped onions
2 tablespoons chili seasoning mix ~ sugar free ~ to taste
1 cup chopped tomatoes
1/4 - 1/2 cup water ~ this will cook down but helps to incorporate the flavors
4 cups shredded cheese ~ I used a combo of mozzarella & sharp cheddar
salt & pepper & onion powder & garlic & cumin ~ to taste

Brown the ground beef.  Chop the jalapeno peppers and onions (I used a small food processor).  Saute these with the beef & then add the seasonings and the tomatoes.  Cook til veggies are wilted.  Pour into greased rectangular baking dish and top with the cheese.  Bake approx 20-30 minutes. 
8 servings = 5 net carbs....................6 servings = 7 net carbs

Hi Emmit with this recipe I'm not sure how many cups it will yield because I haven't made this particular one yet.  You should divide it as the recipe states to get your carb counts for each serving.

Hi Emmitt ~
Yes, do what Toosweet said.  You will be baking it in a rectangular baking dish so let it sit out of the oven for about 10 mins and then take a knife and cut it into squares.   That way you can gauge how many carbs YOUR slice is.
