Title: Turnip
Post by: Amber on May 05, 2011, 08:27:31 PM
Do you have to let the turnip set out of fridge overnight before cooking for it to taste better?

I find some turnips are bitter and others are not. This is simply due to their point of ripeness when harvested. I like to buy tunips which have alredy begun to sprout a small root, they seem to be the sweetest in the bunch. Leaving your turnip on the counter for a few days prior to cooking will also increase the sweetness. Umpa and I had turnip fries and also whole baked turnips this past week and they were delicious. I even eat the skin on whole baked turinp...a little tough but I was always a potato skin guy in the FAT past.  8)

Mine was wonderful!  I diced it up, sprinkled with seasoning and olive oil and popped them in the oven.  We also had chicken tenders oven fried with pork rind coating.  Husband was thrilled!  :)

I plan to try the turnip as a baked potato. Wal Mart only had 2 packages but I bought both!  Mouseissue- I am trying to keep things and find things that we like so we stay on track.

Amber, our Walmart was sold out of turnips yesterday.  However, I did buy a HUGE jicama!  Not sure what I'll do with it yet....thinking about the hashbrown casserole.  I'm wondering if I could dice it up and roast it like the turnips?  Anyone ever tried that?

Found the turnips at Kroger tonight.  So, now I'll let them sit out on the kitchen counter for a couple of days...   ;)

Ok, I finally got around to trying the roasted turnips tonight, and I really enjoyed them!   I tossed them in olive oil and a little Lipton's onion soup mix to give them a good taste!  Wow!  I will do this again!    I also made the artichoke chicken.  It had a nice taste, but it ended up with too much liquid in the dish.  Not sure what I did wrong.

Hi Jan! :)

The way to avoid too much liquid is to bake the chicken half-way without the artichoke mixture,
at halfway, remove the excess water from the baking pan with a spoon, then top chicken with the artichoke mixture and finish baking until done.

Thank you Tony!  ;)  I am sure it will turn out better next time!  I was surprised at the taste.  It almost had a lemon flavor to it.  Not sure where that came from...?  In the past I had only had artichokes in spinach dip.

Hi Jan! :)

A "lemon" (or sour) flavor could come from vinegar in the marinated artichokes.
You could add a bit more mayo and/or add sour cream to dilute it down even more.

Although the recipe does not call for it, I cut back the mayo and added sour cream.
The sour cream seems to "smooth" out the flavor nicely and makes the mixture less oily.

Jan what is the carb count on the onion soup mix? :)

Hi Umpa,  I didn't use much because there's 4 carbs to just ONE tablespoon.  :(  I am sure there's a better alternative to season the turnips.... I used to like roasted potatoes cooked this way, so I think I was just trying to ensure that I liked the turnips on my first try! ha ha  Next time, I'll just use salt, pepper & garlic.   Maybe some onion powder..??

Hi Jan!

Here's a recipe for Faux Lipton Onion Soup mix I found a while back and it's quite good! ;)

3/4 cup Dehydrated Onion Flakes
1/3 cup Beef Bouillon Powder (without MSG)
4 tsp Onion Powder
1/4 tsp crushed Celery Seed
1/4 tsp Xylitol or Erythritol

Crush the onion flakes in a baggie (leaving some larger bits) with celery seed using a meat tenderizing hammer.
Combine with all other ingredients and store in an airtight container.

Entire recipe makes about 1.25 cups of mix with 25 net carbs total (about 1.25 per TBSP)
About 5 tablespoons of mix (at 7.5 net carbs) are equal to a 1.25 ounce package of Lipton Onion Soup mix (at 17 net carbs).

To make onion dip:
Mix 5 tablespoons with one pint of sour cream. Makes 4 servings.
Carb count of dip depends on sour cream used.

I'll post this over in the Recipe section of our forum.

The only reason I had that memory maddiesmom was  one of the girls was on a  plateau. She was putting it on chicken breast before she put them in the oven or was eating the soup as a lunch. It nevered occured to her.Hers said 2 carbs and she thought that was for the whole package, well it wasn't it was per serving and one package was like 6 tablespoons,6 servings.I don't remember the brand,I think it was lipton. ;)
