all i do is slice the spaghetti squash in 1/2 (be careful it takes a little strength,i am not kidding its not as easy as it sounds) place it in a baking pan filled with about an inch of water(place it with the skin/rind up) and bake it at 375 for about 45 minutes...then take it out,flip it over,scrap out the seeds,then with a fork gently scrap out the "spaghetti" onto a plate until you reach the skin from the inside,we put alfredo sauce and mushrooms on ours...and it was very good:)

I stab my squash a few times with a very sharp knife, (BEEBS GET MOM TO DO IT) & then I microwave it for 20 mins before cutting it in half and scooping out the seeds and the  "spaghetti"

Mouse, it would be delicious simply replacing the red sauce with Alfredo...you can eve mix just a bit of red sauce in with the Alfredo. If you want to make your own Alfredo sauce melt 1/3rd stick of butter in a sauce pan over medium heat being careful not to brown the butter, mix in one cup of heavy cream and bring up to heat but not to a boil, stir in 3/4 cup shredded parmeson cheese, remove from heat, cover and let stand 5 minutes....stir well with a few grinds of black pepper....

And thank you Doug for the homemade Alfredo sauce recipe.
I'm going to try this out!

BTW, I too have ordered one of those "grindy things" from Sears.com.
It should be at my local Sears around the end of the month.

I have a good Oster blender but it does not do a great job of reducing things to a powder (like almonds) or a very smooth puree.
After reading a TON of low carb recipes from Doug (and elsewhere), it became evident that a good food processor will really open up many wonderful low-carb cooking possibilities.
What you do today is what matters!

Any suggestions what to use instead of soy flour in the "breading" for the chicken parm?  I have flax meal, almond meal, xanthiam gum, guar gum & baking powder.  I forgot to buy soy flour.  Not quite sure what to use.

You can use just pork rinds if you wish. I add a little soy flour to lighten it up but I've used just processed pork rinds for a fry coating many times in the past. Make sure to keep an eye on your oil temp so you don't burn the coating.
